Shish Tawook

Shish Tawook is a traditional Lebanese dish. In this recipe I used skinless chicken thighs which are gloriously juicy. They are marinaded in a simple marinade of yoghurt, fresh lemon juice, garlic and herbs and spices.

2 lb Skinless, Bonless Chicken Thighs Cut into chunks 4 tbsp Yoghurt 2 tbsp Olive Oil 5 cloves Garlic Crushed 1 Lemon Juice only 1 tbsp Tomato Puree 1 ½ tsp All Spice ½ tsp Cardamom Powder 2 tbsp Onion Powder 2 tsp Garlic Powder 1/2 tsp Ground Ginger 1 tsp Paprika I like Smoked 1 tsp Cumin Powder 1/2 tsp dried Oregano 1 tsp Lemon Pepper Optional ½ tsp Cayenne Pepper Optional ½ tsp Chilli Flakes Salt and Pepper
Marinade chicken in all the ingredients for 2 hours or overnight in the fridge.
Thread the chicken onto the pre soaked skewers.
Add a little oil to a pan over high heat and cook chicken skewers for 5 minute each side then put under a hot grill for 3 - 5 minutes.
You can also use chicken breast in this shish tarok recipe and follow the tip above for moistness.
If you are in a rush, marinade the chicken for 1 - 2 hours and just get going.
Store any leftovers in an airtight container and refrigerate for up to 4 days. To heat, place them in a pan and heat over medium low heat.
You can use any yoghurt in this recipe.
To grill for the full time, you can place under the grill for 5 - 8 minutes each side.
Serve with Pitta Bread/Flat breads, Pickles and Garlic Sauce.
Feel free to adjust the spices/herbs according to your taste.
