Egg Bhurji is delicious served with Pav (Bun), Toast, Roti, Paratha or Puri.

Storage Suggestions

I would not suggest storing these. They are best eaten fresh. However some people do make these for Meal Prep and they keep for 2 - 3 days in an airtight container in the fridge. They can get a little dry though so reheat with butter.

Variations - Egg Bhurji Recipe

Adjust spices according to your taste.
Use 2 tablespoons of Rose Harissa for a truly delicious variation.
For an easier version - whisk all the ingredients together in a bowl minus the Oil and Ghee. Then scramble in hot Oil/Ghee.
