Heat oil and add Onions. Cook om medium high for 10 - 15 minutes till golden brown.
Add Ginger, Garlic and Green Chilli and cook for 1 - 2 minutes.
Stir in Tomatoes and Tomato Puree. Cover and cook on low for 10 minutes
Add Coriander powder, Cumin Powder, Turmeric Powder, Red Chilli Powder, Garam Masala and Madras Curry Powder with a little water. Cook on high for 1 - 2 minutes till fragrant.
Add Prawns and cook for 3 - 5 minutes over medium high heat. You may need to cook them a little longer, depending on the prawns you are using.

Fridge - Prawn recipes are best eaten fresh. At a push, they can be kept in an airtight container in the fridge for a day or two. Reheating Prawns usually makes them a little tougher. If you need to reheat leftovers. you can add a splash of water to a pan and reheat them slowly until warmed through.You can reheat them in the microwave too.I would not recommend freezing cooked prawns.
tips and hints
Prawns require very little cooking. Over cooking makes them rubbery and tough.
A squeeze of Lemon Juice before serving helps to bring the flavours together.
