Indian Masala Corn Chaat - This Corn Chaat masala makes a quick delightful indian snack with tender buttery spiced corn. Ready to eat in minutes, this vegetarian and gluten free recipe is a snack that everyone loves.

Ingredients
  

  • 350 g Corn Kernels I used frozen Corn Kernels½
  • 1 ½ tbsp Butter
  • ¼ tsp Kashmiri Chilli Powder
  • ¼ tsp Cumin Powder
  • ¼ tsp Salt
  • Pinch Black Pepper Powder
  • ½ tsp Chaat Masala Optional, or add Tajin
  • 2 tbsp Lemon Juice

Instructions
 

  • Microwave Corn Kernels with a splash of water until tender. This will take 1 - 2 minutes depending on the quantity of Corn and whether or not it is frozen. Or boil for 5 minutes.
  • Stir Butter, Kashmiri Chilli Powder, Cumin Powder, Salt and Pepper into the cooked Corn.
  • Stir in Chaat Masala or Tajin if using.
  • Drizzle over some Lemon Juice. Taste and adjust seasoning.

Variations

Cheese
You can add a sprinkling of Cheese such as Feta or Cheddar to the Corn for a different flavour profile.
Boil corn
You can boil the Corn instead of microwaving. It will take about 4 minutes to boil the Corn.
Add a pinch of Salt and drain throughly before adding spices.
Add Chutneys
Such as Green Chutney, Tamarind and Date Syrup.

Chaat Masala
Some people don’t like the flavour of this blend. You can skip it or use Tajin which is a delicious Mexican spice blend.
Roast Corn Chaat
Grill Corn on the Cob till charred, then slice the corn off the cob and continue with the recipe.
Add Spicy Chutney like Green Chutney, Sour Chutney like Tamarind and Sweet Chutney like Date Chutney for a Sweet, Sour, Hot Chaat.
Saute Corn
You can saute the Corn in a pan with the Butter instead of microwaving.
Add Veg
Such as bell peppers - green bell pepper/red bell pepper/yellow bell pepper, cucumbers, fresh coriander leaves, red onions, green chilies, tomatoes.
Spices
Adjust spices according to your taste buds.
Add Spices that you like. I like to add chopped Green Chillies sometimes for a super spicy corn chaat recipe.
Toppings
Add toppings such as Sev, pomegranate. These add a nice crunch to this indian chaat recipe.

Serving Suggestions

This sweet corn chaat is perfect served as it is as a snack or starter. 
It is best served with Best Chai Tea.
Serve this as a side dish for any meal or with Grilled Meats/Veg. It is also great for  BBQ’s or a simple lunch.

Storage

Corn Chaat is best eaten fresh. You can prep it ahead of time though by boiling or microwaving the corn in advance and then just assemble when you want to eat it. 
If you do have leftovers, store them in an airtight container in the fridge for up to 3 days.
