Crack Eggs into a medium bowl and whisk until the Eggs and whites are combined.
Preheat the pan and add Butter.
Once it begins to melt add the Egg mixture and let it cook for a few seconds.
Add chilli flakes and chopped green chillies if using.
Use a rubber spatula to fold the Eggs from the sides of the pan and along the bottom to form large, soft curds of scrambled eggs.
Continue cooking and stirring the eggs every few seconds. Stop cooking when the eggs are almost set, but some liquid remains.
Add creme fraiche or milk to stop the eggs from cooking and stir in. Remove from the heat.
Season to taste with salt and pepper and top with chives.

Cooking Eggs at too high a heat results in bland, dry, rubbery eggs.
Remove from heat asap
Once the eggs are almost set, remove them from the heat.They continue to cook after they are off the heat and will look slightly runny in places.
