Healing Turmeric and Ginger Chicken Noodle Soup

Healing Turmeric and Ginger Chicken Noodle Soup - one of my absolute favourite soups. I could quite happily eat this every single day!

Ingredients
  

  • 1 tbsp Oil
  • 1 Onion diced
  • 2 small pieces Cinnamon
  • 2-3 Cloves
  • 2 pods Cardamom
  • 4-5 Black Peppercorns
  • 1 Chicken or 6 - 8 chicken drumsticks cleaned and cut into 8 pieces
  • 1 inch Fresh Ginger crushed
  • 4 cloves Garlic crushed
  • 1 flat tsp Turmeric
  • 1/2 tsp Black Pepper
  • 1/2 tsp Red Chilli Powder
  • 1 large Carrot chopped into slices
  • Salt to taste
  • Enough water to cover the chicken
  • 200 grams Noodles of choice

Instructions
 

  • Heat oil in a medium/large pot over high heat, Add the onions and cook for 5 minutes until golden but not browned. Stir in the cinnamon, cloves, cardamom and peppercorns and saute for 2 minutes. 
  • Add the chicken, ginger, garlic, turmeric, black pepper, red chilli, salt and water, Bring to the boil and then simmer with a lid on over low heat for 25 minutes. 
  • Drop in the carrots and simmer for a further 5 mins. 
  • Make noodles according to pack instructions, Add the noodles to the bottom of the bowl and pour over the soup.
