Dressing
2tbspRed Wine Vinegar
1tbspLemon Juice
1 tspGarlic Powder
1 tsp Mixed Herbs
1/2tspRed Chilli Flakes
1tspSalt

Instructions
Cous Cous
Empty the cous cous into a bowl and add the stock and the remaining ingredients. Stir and cover with cling film then set aside.
Vegetables
Heat oil in a large pan over medium high heat, then add the peppers and onion. Cook for 4 - 5 minutes, turn and cook for another 5 minutes. Remove the veg from the pan and set aside.
Halloumi
In the same pan, cook the halloumi for 3-4 minutes, turn and cook for 1- 2 minutes. Remove from the pan and set aside.
Dressing
Combine all the ingredients for the dressing in a small bowl and whisk throughly.
Assemble
Remove the cling film from the cous cous and fluff using a fork. Empty the cous cous onto a large platter, then add the vegetables, halloumi and dressing.
