Ingredients
  

Cous Cous

  • 250 grams CousCous
  • 250 ml Vegetable Stock Hot
  • 1/2 tsp Smoked Paprika
  • 1 tsp Cumin Powder
  • 1/2 tsp Coriander Powder
  • 1/2 tsp Red Chilli Powder
  • Salt and Pepper

Vegetables, Nuts and Halloumi

  • 1 Pepper Deseeded and cut into large chunks
  • 1 Red Onion Cut into Wedges
  • Salt and Pepper
  • 1 tbsp Olive Oil
  • 240 grams Halloumi cut into thick slices
  • 1 Small handful Walnuts Dry pan fried for 5 minutes and chopped

Dressing

  • 2 tbsp Red Wine Vinegar
  • 1 tbsp Lemon Juice
  • 1 tsp Garlic Powder
  • 1 tsp Mixed Herbs
  • 1/2 tsp Red Chilli Flakes
  • 1 tsp Salt
  • 1 tbsp Honey

Instructions
 

Cous Cous

  • Empty the cous cous into a bowl and add the stock and the remaining ingredients. Stir and cover with cling film then set aside.

Vegetables

  • Heat oil in a large pan over medium high heat, then add the peppers and onion. Cook for 4 - 5 minutes, turn and cook for another 5 minutes. Remove the veg from the pan and set aside. 

Halloumi

  • In the same pan, cook the halloumi for 3-4 minutes, turn and cook for 1- 2 minutes. Remove from the pan and set aside.

Dressing

  • Combine all the ingredients for the dressing in a small bowl and whisk throughly. 

Assemble

  • Remove the cling film from the cous cous and fluff using a fork. Empty the cous cous onto a large platter, then add the vegetables, halloumi and dressing.
