Oaty Date and Honey Flapjacks - You know all them dates you got for Ramadan? It's time to turn them into a delicious bar that you can enjoy at Suhoor/Sehri! Note - It is totally acceptable to make them throughout the year too.
Preheat oven to 180 degrees C, Gas Mark 4.
Grease an oven tray/tin (approx 20cm x 30cm) and line with greaseproof paper.
In a dry pan, very briefly (about 1 - 2 mins) toast the coconut, then set aside.
Heat the brown rice syrup, honey and rapeseed oil in a large pan until it is just simmering, then remove from the heat.
Add the oats, coconut and dates to the oil mixture and combine thoroughly using a wooden spoon.
Add the mixture to the pre lined tray and make sure (don't skip this) you press the mixture down using the back of a spoon or bottom of a drinking glass.
Bake for 20 - 25 minutes and allow to cool for 5 - 10 minutes before cutting.
