Colourful stir fried quinoa

I always thing that foods that are bright are also usually nourishing too and that is definitely the case with this colourful stir fried quinoa. Here is another non boring way to enjoy quinoa.

Ingredients
  

Quinoa

  • 1 tbsp Sesame Oil
  • 2 cloves Garlic sliced finely
  • 1/2 inch Ginger crushed or grated finely
  • 1 small Carrot Peeled with a peeler
  • 6 - 7 Broccoli Tops
  • 3 Spring Onions Chopped finely
  • 3 tbsp Soy Sauce or Tamari
  • 370 g Cooked Quinoa 2 Cups (I use a mix of red and white)
  • 1 Egg whisked lightly in a small bowl

Sauce

  • 2 tbsp Soy Sauce or Tamari
  • 1 tsp Honey or Maple Syrup
  • 1 tbsp Peanut Butter or Almond Butter
  • 2 tbsp Lime Juice
  • 1 tbsp Sriracha Sauce
  • 1 Red Chilli sliced into rounds
  • White Pepper

Toppings

  • 2 tbsp Sesame Seeds Toasted lightly
  • Small Handful Nuts

Instructions
 

  • Heat a large pan over low/medium heat. Pour in the oil and add the garlic and ginger. Stir for a minute before adding the carrots and half of the soy sauce. 
  • Cover and cook for 2 - 3 minutes before adding the broccoli, spring onions and the remaining soy sauce. Cover again and cook for a further 2 minutes.
  • Stir in the quinoa and egg scramble and cook for 2 minutes. 
  • In a small bowl combine the ingredients for the sauce, add to the pan and cook for 4 minutes over medium low heat. 
  • Remove the quinoa from the heat and garnish with peanuts and sesame seeds.
