I always thing that foods that are bright are also usually nourishing too and that is definitely the case with this colourful stir fried quinoa. Here is another non boring way to enjoy quinoa.
370gCooked Quinoa2 Cups (I use a mix of red and white)
1Eggwhisked lightly in a small bowl
Sauce
2tbspSoy Sauceor Tamari
1tspHoneyor Maple Syrup
1tbspPeanut Butteror Almond Butter
2tbspLime Juice
1tbspSriracha Sauce
1Red Chillisliced into rounds
White Pepper
Toppings
2tbspSesame SeedsToasted lightly
SmallHandfulNuts
Instructions
Heat a large pan over low/medium heat. Pour in the oil and add the garlic and ginger. Stir for a minute before adding the carrots and half of the soy sauce.
Cover and cook for 2 - 3 minutes before adding the broccoli, spring onions and the remaining soy sauce. Cover again and cook for a further 2 minutes.
Stir in the quinoa and egg scramble and cook for 2 minutes.
In a small bowl combine the ingredients for the sauce, add to the pan and cook for 4 minutes over medium low heat.
Remove the quinoa from the heat and garnish with peanuts and sesame seeds.
