Masala Lamb Chops

These Masala Lamb Chops are warming, aromatic, succulent and flavourful. They are coated in a Masala Paste made up of Cumin, Coriander, Chilli and more and cooked low and slow.

Ingredients
  

First Marinade

  • 4 cloves Garlic crushed
  • 3 inch Ginger crushed
  • 1 ½ tbsp Papaya Powder
  • Salt

Second Marinade

  • 200 g Plain Yoghurt
  • 70 g Double Cream
  • 2 tbsp Tomato Puree
  • 2 tbsp Lemon Juice
  • 1 tbsp Malt Vinegar
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 1/2 tsp Cayenne Pepper
  • 1 tsp Paprika Powder
  • 1 tsp Red Chilli Powder
  • 1 tbsp Kasuri Methi
  • 1 tbsp Garam Masala
  • ½ tsp Ground Cinnamon
  • ¼ tsp Ground Mace
  • ¼ tsp Ground Nutmeg
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 3 tbsp Vegetable Oil

Chops & Potatoes

  • 14 Lamb Chops lamb cutlet
  • 2 large Potatoes Peeled and chopped into 1 inch cubes

Instructions
 

  • Pat the lamb chops dry with a paper towel. Combine the first marinade ingredients and massage into chops. Set aside for 20 minutes.
  • Make tiny slits on the lamb chops. 
  • Add the second marinade ingredients to a blender and blend to a paste.
  • Rub the marinade over the lamb chops and let it chill in the fridge for 1 - 2 hours. Leave out at room temperature for 30 mins before starting to cook it.
  • Add chops to an oven tray along with the potatoes. Cook in a preheated oven at gas mark 4/180 C for 45 minutes to 1 hour.

Notes

Meat Tenderiser

Does exactly what the name suggests and I like to use it with Chops. It is just dried papaya which tenderises the meat to make it more succulent.How long do they keep?

How to Grill

To grill instead of cooking in the oven, grill for 3 minutes each side.

Freezing Instructions

You can marinade the chops and freeze so they are ready to cook at a later date by adding to a ziplock bag and freezing for up to 3 months.
You can freeze cooked and cooled lamb chops for up to 3 months in a ziplock bag.

What to serve with Masala Lamb Chops?

Serve with Roti, Rice, Naan and Kachumbur Salad, Raita or Mint Sauce.

FOR THE MINT SAUCE

Combine 2 handfuls Coriander leaves and stems, 1 small handful Mint leaves, 1 Green Chilli, 1/2 tsp Chaat Masala (Optional), 4 tbsp Greek, Plain or Natural Yoghurt and a Pinch of Salt in a blender and blend till smooth.
You can also serve them with Five Minute Magic Green Avocado Chutney

Notes

Cooking time depends on Lamb Chop thickness.
You can change the marinade ingredients as you like and if you don't have an ingredient, just skip or replace with something similar.
