Oven Baked Salmon

Safira
This Oven Baked Salmon is a lovely way to serve salmon that is very quick to make and so delicious. This Salmon is vibrant, moist, flaky, citrusy and seasoned beautifully. A perfect easy weeknight meal for busy people and great for meal prep.

Ingredients

  • 4 Salmon Fillets
  • 4 cloves Garlic crushed
  • 1 tsp Coriander Powder
  • 1 tsp Cumin Powder
  • 1 flat tsp Red Pepper Flakes
  • 1 tsp Smoked Paprika
  • Salt and Pepper
  • 2 tbsp Olive Oil
  • 1 small Lemon Zest and Juice plus 1 Lemon cut into slices
  • 1 large Red Onion

Instructions

  • Preheat oven to 200 °C/Gas Mark 6.
  • Place the Salmon on a plate and rub with the garlic, paprika, lemon zest, corinader, cumin, red pepper flakes, salt and pepper. Drizzle over oil amd lemon and rub in.
  • Place the salmon on an oven tray. Scatter around lemon slices and sliced red onions. Roast for 10 to 15 minutes, until Salmon is cooked through.
  • To serve, divide the Salmon and potatoes between plates. Serve with avocado dip (see notes) and your favourite sides. I love Cous Cous or Rice and Green Veg.

Notes

  • Optional - To serve with the avocado dip - Combine half a large Avocado, with Coriander leaves/stems, Juice of half a Lemon or Lime, a little Olive Oil plus Salt and Pepper in a blender and blend till combined.
  • Is the Salmon cooked? Apart from the obvious colour change, the best way to check if the salmon is cooked through, is to insert a fork into the center of the fillet and slightly twist it. If it comes out flaky, opaque and moist, then it is ready.
  • Sustainability - You can check if your Salmon is sustainable by checking out suppliers here. MSC labelled salmon comes from a fishery that has been independently certified to the MSC Fisheries Standard. (This can be easily identified via the blue MSC sticker on the packaging). Brands who have committed to selling sustainable Salmon are Aldi, Lidl, Tesco
