If you are looking to get a delicious dinner on the table in 15 minutes, you are looking at it. This is a delicious soup that is similar to an Egg Drop Soup and is our favourite soup to make when we are short on time. Warm, Cosy and great when you are under the weather.
3Spring Onionssliced finely or 1 small red/white onion diced
500mlChicken Stock
1.5tbspSoy Sauce
325g tinSweetcornHalf blended with a stick blender
1lbChicken Breast Roast chicken breast, skin removed, meat shredded or Rotisserie Chicken shredded
2EggsWhisked in bowl
2Green Chillieschopped (Optional)
Salt and White Pepper
Instructions
In a large pot over medium/high heat, add the oil and once hot add ginger, garlic, green chilli if using and spring/red/white onions. Cook for 2 - 3 minutes.
Pour in the Stock and Soy Sauce. Simmer for 2 -3 minutes.
Add the sweet corn and chicken and simmer on low for 5 minutes. Turn off the heat and remove pan fron gas.
Stir in the egg and stir vigorously.
Taste and season with black pepper and salt if needed (this will depend on the stock cube you have used. Garnish with Coriander and add Green Chillies if using.
Notes
You can add noodles to the soup to make it more filling and even more flavourfulYou can use frozen corn, corn kernels or creamed corn in this recipe. If you don’t have a can of creamed corn, blend some corn before adding it to the soup. For a thicker soup, you can add a cornflour slurry by mixing 2 tbsp Corn flour into 1/4 cup of water and adding along with the stock. Make sure you stir continuously as you are adding it. Add a pinch of Sugar if you feel like it is a little Salty/Sour.A shredded rotisserie chicken can be added instead of the chicken breast. Chicken thighs (boneless0 make for a more flavourful soup. They can be used here. The cooking time will need to be increased though.
