Lemon Cous Cous with Pomegranate

- 200 g Couscous
- 250 ml boiled Chicken or Veg Stock/Broth
- Salt and Pepper to taste
- Juice of 1 Lemon
- 3 tbsp Olive Oil
- 1/4 - 1/2 tsp Dried Mint
- Hand full Pomegranate Seeds
Pour the Couscous into a bowl and stir in the stock, seasoning, lemon and olive oil.
Cover with Cling film for 10 minutes.
Remove cling film and fluff with a fork.
Stir in the pomegranate and dried mint and check the seasoning, adding more if necessary.
