Salted Peanuts roughly chopped
plus more to top the salad with (Honey or Chilli peanuts work too)

Juice of 3 limes

freshly grated Ginger

Rice Wine Vinegar

Instructions
Dressing
In a large bowl, whisk together the limes, peanut butter, ginger, rice wine vinegar, sesame oil and chilli flakes. Season to taste.
Peel the carrots and cucumbers.
Add the cucumbers, peppers, carrots, coriander, spring onions, red onion, peanuts and sesame seeds to the dressing bowl and toss to combine.
Garnish with more peanuts and enjoy.
Notes
You can matchstick the salad ingredients instead but for ease I tend to dice.
