Nutty Crunchy Asian Coleslaw

Ingredients
  

  • 1 Large Cucumber diced
  • 1 Red Pepper diced
  • 1 Green Pepper diced
  • 1/2 Yellow Pepper diced
  • 2 Carrots diced
  • Handful Coriander leaved chopped
  • 2 Spring Onions sliced finely
  • 1/2 Red onion sliced finely
  • 40 g Salted Peanuts roughly chopped plus more to top the salad with (Honey or Chilli peanuts work too)
  • 1 tbsp Sesame Seeds Optional

Dressing

  • Juice of 3 limes
  • 3 tbsp Peanut Butter
  • 2 tsp freshly grated Ginger
  • 2 tbsp Rice Wine Vinegar
  • 1 tbsp Sesame Oil
  • 1 pinch Chili Flakes
  • Salt and Pepper

Instructions
 

Dressing

  • In a large bowl, whisk together the limes, peanut butter, ginger, rice wine vinegar, sesame oil and chilli flakes. Season to taste.
  • Peel the carrots and cucumbers.
  • Add the cucumbers, peppers, carrots, coriander, spring onions, red onion, peanuts and sesame seeds to the dressing bowl and toss to combine.
  • Garnish with more peanuts and enjoy.

Notes

You can matchstick the salad ingredients instead but for ease I tend to dice.
