Add 1 inch of water to a pot, cover, and bring to a boil over high heat.
Once boiling, add an egg or as many as you are making into the pot.
Close the lid and let it continue to boil for exactly six minutes. After six minutes, remove the egg from the pot and run under cool water until cool enough to handle. Peel, and add to your toast.
Whilst the eggs are steaming, peel and de stone the avocado.
Avocado
Mash the avocado using a fork. Then squeeze in the lime and add seasoning and chilli flakes. Mix thoroughly.
Toast
Toast your bread.
Remove from the toaster/grill and top with the mashed avocado and half boiled egg. Add more seasoning if you like.
Notes
Variations -
Sprinkle over some Zataar at the end.
You can mash some feta into the avocado.
You could also blend some coriander and green chillies and add it to the avocado.
You can of course have your eggs scrambled, poached or fried instead.
Drizzle over some hot sauce.
