Delicious Indian Masala Omelette - Masala Omelette is an indian omelette that is quick to make, delicious and something we have in our home every other day at breakfast time. This is a highly adaptable recipe and we often make it without any vegetables.
1/2Onionfinely diced, you can sub with red onion or 2 finely sliced spring onions
2Green Chilliesfinely chopped, adjust quantity to taste
Small HandfulFresh Corianderfinely chopped
1/4tspGround Turmeric
1/2tspRed Chilli Powder
1/2 tspSalt Or to taste
1/2tspBlack PepperOptional
2tbspMilkOptional
2tbspGheeor Oil
Instructions
Whisk the eggs with all the remaining ingredients apart from the Ghee.
Heat ghee or oil in a pan over medium-high heat and pour the egg mixture into the hot pan. You can add half of the egg mixture to make 2 omelettes or all of it.
Push cooked parts into the middle with a spatula and swirl the pan to redistribute the egg mixture.
Once the egg has set at the bottom, flip it and continue to cook till goden brown all over.

Another way of making Masala Omelette
This is another way of making Masala Omelette.After you heat the ghee, you can then add the Onion and cook till golden.Then add garlic and tomatoes (and any other veg) and cook for a few minutes before adding the spices.Once they are fragrant, you add in the whisked eggs (with milk if using) and coriander and cook.
Serving Suggestions
I like to have my omelette in a chapatti rolled up with some green chutney, or with toast (under the grill) but some people swear by white bread only or a Pav.You can also serve with Chapatti/Roti, Paratha, ghee Roti (dribble) or in a wrap.Many people serve it with toasted bread slices and tomato ketchup but I am not a fan of ketchup!

Chaat A sprinkling works really well here.Garlic Add 1 clove crushed or sliced or Garlic granules.Loaded Veggie OmeletteAdd allllll the veg and increase the number of eggs you use. Good options are Peppers. You can also add Mushrooms, Sweetcorn, Tomatoes, Broccoli, Spinach, Asparagus.Cheese OmeletteYou can add grated cheddar to the egg mixture to make a cheesy omelette or add it at the end, before sliding under the grill for a minute.Milk You can add Milk, Cream or Creme Fraich for super creamy Eggs.Mushroom Cheese OmeletteAdd the mushrooms and cheese in with the egg mix. So good.Masala Omelette QuesadillaMake a Quesadilla version!Masala Omelette French ToastWhen I was growing up, my mum always made French toast like this and it wasn't until I lived away from home at University that I learnt that French toast was actually supposed to be sweet. My friend made some and when I bit into it, I was devastated! LOL. Sweet French Toast is nice but I would always choose this version over it. I think because when you expect it to be savoury and it isn't, it just feels strange.Omelette ToastAnother way to serve it is to embed the bread (remove the crusts into the omelette) before flipping.You can also flip the Egg into the Toast to create a sandwich.
Storage and Reheating
Omelettes keep surprisingly well for up to 3 days in the fridge but I would not recommend making them ahead of time. They are best served immediately after making.If you do have leftovers and wish to reheat, the best method is to do it on the stove top with a tsp of Oil.You can also microwave for 10 seconds at a time to avoid drying the omelette out.
Freezer Instructions
Omelettes can be frozen for up to 3 months.To store in the freezer, wrap tightly or place into freezer bags or an airtight container.To reheat, simply add to a pan with preheated oil and cook covered gently over a low flame.
