I have always been partial to soft and chewy Oat Cookies. Especially ones studded with chocolate chips. They are easily adaptable and oh so delicious.

Ingredients
  

  • 100 g Rolled Oats
  • 100 g Plain Flour
  • 100 g Butter
  • 20 g Granulated Sugar
  • 100 g Light Brown Sugar
  • 1 tbsp Golden Syrup
  • 2 tsp Vanilla
  • 200 g Choc Chips

Instructions
 

  • Preheat oven to 180 C/Gas Mark 4.
  • Whisk the Oats & Flour together in a bowl.
  • Melt Butter in a pan with Sugar and Golden Syrup. 
  • Remove from heat and stir in Vanilla.
  • Pour over the Oats & Flour and bring together to form a dough.
  • Allow to cool a little. Fold in the chocolate chips
  • Form into cookies with a small ice cream scoop or 2 teaspoons. You may want to lightly oil or wet them first.
  • Bake in a preheated oven at 180 C/Gas Mark 4 for 15 - 20 minutes.

Notes

Oats - Use old fashioned or rolled oats which add the best texture and chew. You can read all about the different types of oats here.
How long do they keep? - These keep well for up to a week in an airtight container. 
Can they be frozen? - They also freeze well. Freeze baked and cooled cookies for up to 3 months. Wrap them well and place in a ziplock bag or airtight container. 
Variations - You can add whatever you like to them such as raisins, cranberries, nuts, Autumnal spices. You can also brown the butter first which adds the most gorgeous nuttiness. You can also swap the Golden Syrup for Honey if you like.
