Instructions
Whisk the Eggs in a bowl and set aside.
Heat oil and ghee in a large pan and add cumin. Once it sizzles, add the Onion & Green Chillies and cook till softened.
Then add the Garlic & Ginger and saute for 30 seconds to 1 minute.
Stir in Tomatoes, and mix well. Cover the pan with a lid and cook for 5 - 6 minutes.
Add whisked Eggs, Turmeric, Red Chilli, Coriander Powder, Pav Bhaji Masala, Salt and Pepper and scramble gently for 2 minutes.
Garnish with chopped Coriander and continue to cook for another minute.
Stir through Butter and remove from the heat.

How to serve Egg Bhurji?
Egg Bhurji is delicious served with Pav (Bun), Toast, Roti, Paratha or Puri.
Storage Suggestions
I would not suggest storing these. They are best eaten fresh. However some people do make these for Meal Prep and they keep for 2 - 3 days in an airtight container in the fridge. They can get a little dry though so reheat with butter.
Variations - Egg Bhurji Recipe
Adjust spices according to your taste.Use 2 tablespoons of Rose Harissa for a truly delicious variation.For an easier version - whisk all the ingredients together in a bowl minus the Oil and Ghee. Then scramble in hot Oil/Ghee.
Top tips for Egg Bhurji Recipe
Add a tablespoon or 2 of Pav Bhaji Masala or Kitchen King Masala. If you can't find either, use a little Garam Masala.
Add 1 tbsp of Milk for fluffy Eggs.
Don't skimp on Ghee or Butter!
Scramble the eggs gently for 2 - 3 minutes for soft curds. Don't over cook them!
