Corn Ribs

These Corn Ribs  are crisp, full of flavour and ready to eat in under 20 minutes.

Ingredients
  

  • 2 Corn on Cobs Husks removed
  • 1 ½ tbsp Oil Olive or Veg, you can also use Butter (Around 2 - 3 tbsp)
  • 1 tsp Ground Cumin
  • ½ tsp Ground Coriander
  • ½ tsp Red Chilli Powder
  • ½ tsp Smoked Paprika
  • Salt and Pepper

To Serve

  • Lime Wedges

Instructions
 

  • Stand the corn vertically on a chopping board with the wider side touching the board. Then cut down vertically with a sharp knife to cut the corn in half and then cut the halves into quarters.
    * Or, you can microwave the Corn for a few minutes before cutting - see notes. This makes it easier for the knife to go through.
  • Combine all the Spices in a bowl and mix together with a fork.
  • Brush spice mix over the corn.
  • Place spiced Corn Ribs in a single layer in the air fryer basket. Make sure there is space between the ribs.
  • Cook the corn in an Air Fryer at 190ºC for 10-15 minutes. You can flip them midway but I find that this is not necessary.

Notes

HOW TO STORE

Corn Ribs are best eaten as soon as they are out of the Air Fryer. 
In the unlikely event that you have leftovers, place them in an airtight container in the fridge for up to 2 days.
Reheat in the Microwave or Air Fryer for 1 - 2 minutes until warmed through.

Variations

One of the best things about these Corn Ribs is that you can use any seasonings of your choice.
You can use Seasonings such as Cajun, Jerk, Peri Peri.
You can also Air Fry and then brush over a Flavoured Butter.
You can serve them with any dips of your choosing such as Mayonnaise, Hot Sauce, Garlic Sauce.

MY TOP TIP

If you are finding it difficult to chop the Corn, I would suggest placing the Corn in the microwave first for a few minutes - 8 - 9. This will make it easier to cut. Then air fry at 180 C for 15 minutes.
