Indian Style Stir Fried Cabbage with Potato - One of my favourite meals is this one pot mildly spiced indian cabbage and potato dish. It is perfect served with roti.
Heat oil in a medium wok/pan over medium/high heat and add the tomatoes and garlic. Allow to cook for 4- 5 minutes then add all the remaining ingredients and 2-3 tablespoons of water.
Cover the pan, turn the heat down and steam for 8 - 10 minutes. Check the potato and cabbage is cooked, then remove from heat.
You can add peas to this dish as I often do. Just add at the same time as the potatoes etc.
