I love me some chicken and courgette soup when the weather is a little in-between like today..Quick and easy to make and delicious too!
In a large pot over medium low heat add the oil and onion. Cook for 6 - 7 minutes or until the onions are golden.
Add the garlic and ginger, stirring often. Cook for 2 - 3 minutes. Add the carrots and saute for a further 3 minutes.
Pour in the stock, bring to a simmer, then add the chicken and the courgetti, as well as the thyme and chilli flakes.
Season to taste. Serve the soup in bowls and sprinkle with spring onions and sesame seeds.
