Instructions
Preheat the oven to gas mark 6/200 C.
Season the chicken liberally with salt and pepper. Slash the chicken 2 to 3 times
In a small non stick pan add the oil, and butter.
Add the chicken and sear for 3 minutes each side. Remove from the pan and set aside.
In a large oven tray, arrange the chickenm garlic and pour in the stock.
Cover with foil. Bake in the oven for around 1 hour or until juices run clear when a fork is inserting into the thickest part of the chicken.
Notes
Other flavourings can be added and rubbed into the chicken before searing. Good options are Cayenne Pepper, Paprika, Cumin.
