Fig, Stem ginger and Dark chocolate energy bites

Ingredients
  

  • 200 g partially rehydrated figs
  • 3 tbsp peanut butter or almond butter
  • 1 tbsp stem ginger syrup From a jar of stem ginger
  • 35 g dark chocolate grated
  • 1 tbsp chia seeds
  • 60 g oats

Instructions
 

  • Add all the ingredients apart from the chocolate into the bowl of a food processor and pulse till it comes together.
  • Add the chocolate to the mix and using the palm of your hands, shape the dough into balls.
  • Place in the fridge to set for an hour.

Notes

Details of the figs I use can be found in the paragraph above the recipe.
If you prefer, use dates instead. Pre soak them for an hour and add 1 tsp coconut oil to the mix.
