Chicken Satay Salad Bowl

Ingredients
  

Chicken

  • 2 lb or 450g chicken breast cut into strips
  • 4 tbsp Soy Sauce
  • 2 tbsp Honey
  • 1 tbsp oil
  • Salt and Pepper to taste

Sauce

  • 125 g smooth peanut butter
  • 3 garlic cloves crushed
  • 1 tbsp sesame oil
  • 3 tbsp soy sauce
  • 1 tbsp Honey
  • 2 tbsp Sriracha or Hot Sauce
  • 2 tbsp lime juice
  • 200 ml coconut milk Half a Tin
  • 3 tbsp water
  • Salt to taste I use 1/4 tsp

Cabbage Salad

  • 1/4 small Red Cabbage chopped finely
  • 1/8 small White Cabbage chopped finely
  • 1 Carrot grated
  • 1/4 a small Red Onion sliced finely

Instructions
 

Chicken

  • Combine the ingredients for the chicken and allow to marinade for an hour.
  • Heat oil in a non stick frying pan over high heat.
  • Add the chicken and cook until golden and cooked through, then transfer to a plate.

Sauce

  • In a small/medium bowl combine all the ingredients for the sauce and mix well.

Assemble

  • Combine all the ingredients for the salad in a large salad bowl.
  • Add the Chicken and top with some of the sauce.
