Rocket and Fennel Salad with Sumac

Ingredients
  

  • 1 large Fennel Bulb sliced very thinly
  • 140 g Rocket Leaves
  • 1/2 Red Onion sliced finely
  • 3 tbsp Olive Oil
  • 1 tbsp Sumac
  • Juice of 1/2 Lemon
  • 1/2 Tsp Salt
  • 1/4 Tsp Black Pepper
  • 1 heaped tbsp Toasted Mixed Sesame/Pumpkin/Sunflower Seeds

Instructions
 

  • In a medium, large bowl combine the fennel , rocket leaves and red onion.
  • In a separate small bowl, whisk together the oil, sumac, lemon juice, salt and pepper.
  • Just before serving add the dressing to the salad leaves and top with toasted mixed seeds.
