Add the spring onion, garlic, ,eggs, cumin, paprika, cayenne,theme and salt and pepper. Mix well to combine.
Heat a large non stick pan over medium/low heat. Once hot and 1 tsp of oil and swirl the pan to coat.
Use a tablespoon to get some mixture (roughly 2 heaped tablespoons worth) and gently place it in the pan, pressing down slightly with the back of the spoon. Add up to 3 more.
Cook for 3 minutes or until golden (press down with a spatula slightly as you cook them), then flip and cook for a further 3 minutes.
