Chai Apple and Yoghurt Granola Parfait

Chai Apple and Yoghurt Granola Parfait – A creamy, decadent, breakfast or dessert with all the delicious flavors of an apple crumble!

Ingredients

  • 25 g Butter
  • 2 Apples peeled and cored and thinly sliced
  • 1 tsp Cornflour
  • 75 ml Water
  • 40 g Brown Sugar or Coconut Sugar
  • 1/2 tsp Cinnamon
  • 1/2 tsp Ginger Powder
  • 1/4 tsp Cardamom Powder
  • 1/8 tsp Nutmeg
  • 1/8 tsp Black Pepper
  • 1 tsp Lemon Juice
  • 250 ml Yoghurt
  • 4 tbsp Granola

Instructions

  1. In a large pan over medium high heat, melt the butter and add the apples. Cook stirring continuously until tender. (6 - 7 minutes).

  2. Add the cornflour to the water in a small bowl and mix. Pour into the pan. 

  3. Now add the sugar, cinnamon, ginger, cardamom, nutmeg, black pepper and lemon juice. Bring to the boil and simmer for 2 minutes.

  4. Allow to cool slightly, about 5 minutes. Spoon alternating layers of the caramelised apples, yogurt and granola into 4 glasses.
