  • 4 Chicken Quarters

Marinade Ingredients

  • 2 tbsp Oil Vegetable, Corn or Sunflower
  • 1 tablespoon Tomato Paste Puree
  • 1 teaspoon Ginger Paste
  • 1 teaspoon Garlic Paste
  • ½ Lemon Juice Only
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • ½ teaspoon Turmeric Powder
  • ½ teaspoon Chilli Flakes
  • Salt
  • 1 teaspoon Ground Black Pepper

Instructions

  • Wash and trim excess fat from the raw chicken leg quarters and pat the chicken dry with paper towel. Make 2 slits in each quarter.
  • Place in a bowl and then add all the ingredients for the marinade. Rub into the chicken and set aside for 30 minutes.
  • Spray the air fryer basket with a little oil. Place chicken skin side up in the air fryer basket and air fry at 200 C/400 F for 15 mins. Then flip and air fry for a further 10 - 15 minutes.
TOP TIP- The internal temperature of the chicken should reach 74 C - 85 C/165 F - 185 F. Cook time may vary between air fryers. The best way to know that the chicken is done is to check the internal temperature before serving.
  • If you have a smaller air fryer, continue with remaining chicken until all the chicken is cooked.
  • Allow the chicken to rest for 10 minutes before serving.
