10Chicken QuartersSlit a few time each, Skin off
½cupPlain Yoghurt
2 ½tablespoonKashmiri Chilli Powder

For the Sauce
⅔cupPlain Yoghurt
⅓cupMayonnaise
½cupDouble Cream
1tablespoonGarlic Paste
1teaspoonSalt
1teaspoonSugar
2Egg WhitesBoiled
2Cheese Slicesor ½ cup Cheddar, grated
¼cupWateror Milk
Instructions
Step 1: Marinate the ChickenAdd the yoghurt, Kashmiri chilli powder, chilli powder, cumin powder, coriander powder, garam masala, turmeric, salt, black pepper, green chillies, garlic, ginger, lemon juice and oil to a large bowl. Mix well.Add the chicken and coat thoroughly, ensuring the marinade gets into the slits. Cover and refrigerate for at least 4 hours, preferably overnight.
Step 2: Roast the ChickenPreheat the oven to 200°C. Arrange the chicken on a baking tray. Roast for 45 minutes until the chicken is cooked through.
Step 3: Grill for ColourSwitch the oven to grill mode. Grill for 10 to 15 minutes until lightly charred and caramelised.
Step 4: Make the SauceAdd the yoghurt, mayonnaise, double cream, garlic, salt, sugar, boiled egg whites, cheese slices and water to a blender.Blend until completely smooth.
Step 5: Finish the ChickenPour the sauce evenly over the cooked chicken. Cover the tray tightly with foil. Return to the oven and cook for 5 minutes.
Step 6: ServeServe hot with Naan.
