Saffron Chai (Karak-Style Saffron Milk Tea)
Make saffron chai with Assam tea, evaporated milk and a little caramelised sugar. This rich, fragrant karak-style tea is easy to make at home.
Ingredients
- 4 teaspoon granulated sugar
- ⅛ teaspoon ground saffron
- 500 ml water
- 3 teaspoon Assam tea leaves or 3 Assam tea bags
- 125 - –170ml evaporated milk Rainbow recommended
Instructions
Caramelise the sugar and saffron
- Add the sugar and ground saffron to a saucepan over a low to medium heat. Stir as the sugar begins to melt and change colour.
- You're looking for a little golden colour rather than a dark caramel. The saffron can make the mixture appear darker quite quickly, so watch it carefully and don't wait for all the sugar to melt completely.
Add the water
- Carefully pour the water into the pan. The sugar may seize or harden briefly when the water hits it. This is normal; continue heating and stirring until it dissolves.
- Bring the mixture to a boil.
Add the tea
- Add the Assam tea leaves or tea bags and reduce the heat. Simmer for 5 minutes to extract a strong tea flavour.
- You want a brew that tastes robust enough to balance the milk, rather than a weak tea that disappears once the evaporated milk is added.
Add the evaporated milk and simmer
- Pour in 125–170ml of evaporated milk, depending on how creamy you like your chai.
- Bring the tea back to a gentle boil, then reduce the heat to low and simmer for another 10–15 minutes. Stir occasionally and keep an eye on the pan, as milk tea can rise and boil over unexpectedly.
- The longer simmer gives the tea time to develop its flavour and allows the milk, saffron and caramelised sugar to come together.
Froth the chai
- This is an important part of the finish. Once the tea has simmered, remove it from the heat and strain it into a heatproof jug.
- Pour the tea carefully between two heatproof jugs or vessels, lifting one slightly as you pour to create a little froth on the surface. Repeat a few times until a light layer of foam forms.
- Keep the pouring height modest and work slowly, as the chai is very hot. You can also use a small milk frother if you prefer a simpler method.
Serve hot
- Pour the saffron chai into small cups and serve immediately. The tea should be strong and creamy, with a fragrant saffron aroma and a subtle caramel flavour underneath.
Notes
Tips for the Best Saffron Chai
- Don't burn the sugar. You're looking for a little colour, not a deep, dark caramel. Burnt sugar will make the tea bitter.
- Be patient when adding water. Melted sugar can seize when the water is added. Keep heating until it dissolves.
- Use strong tea. Assam works particularly well because its flavour remains noticeable after the milk is added.
- Adjust the milk to taste. Use 125ml for a stronger brew or up to 170ml for a creamier result.
- Keep the simmer gentle. A rolling boil can cause the milk to spill over the pan. Stir occasionally and lower the heat as needed.
- Froth just before serving. The foam is best enjoyed while the tea is hot and freshly made.
Variations
- A more traditional karak-style flavour: Leave out the saffron and follow the same method for a simple caramelised-sugar karak.
- Add cardamom: Lightly crush a few green cardamom pods and simmer them with the tea for a more aromatic cup.
- Use saffron threads: Grind the threads before adding them to the sugar so they distribute more evenly.
- Make it less sweet: Reduce the sugar to 2–3 teaspoons, bearing in mind that the caramelised sugar contributes to the flavour as well as the sweetness.
- Make it extra creamy: Use the upper end of the evaporated milk quantity, adding a little more only if needed.
What to Serve with Saffron Chai
Saffron chai is lovely on its own, but it also works well alongside something savoury or sweet. Serve it with chapati, paratha or a simple breakfast, or pair it with biscuits, dates or a slice of cake for an afternoon cup. If you've ever stopped at a Gulf tea stall for karak and chapati, you'll understand how well a strong, milky tea works alongside something freshly made and savoury.Storage and Reheating
Saffron chai is best made fresh, particularly if you want to enjoy the frothy finish. If you have leftovers, allow the tea to cool and refrigerate it in a covered container for up to 2 days. Reheat gently in a saucepan, stirring occasionally, until piping hot. Avoid boiling it vigorously, as the milk can catch or spill over. The foam will disappear during storage, so froth the tea again just before serving if desired. Do not leave milk tea at room temperature for extended periods.Frequently Asked Questions
Does saffron chai originate in India?
Saffron tea and milk tea are enjoyed in different parts of the world, including India and the Gulf. Chai has deep roots in India, but recipes and preparation techniques vary across regions. This recipe uses a karak-style method rather than claiming to represent one definitive traditional version. Is saffron chai the same as karak chai?
Not exactly. Karak chai is a strong, milky tea popular across the Gulf. Saffron chai is flavoured with saffron, and some versions use additional spices or different brewing methods. This recipe combines saffron with a karak-style preparation. Why caramelise the sugar first?
Gently melting and colouring the sugar gives the tea a deeper, slightly toffee-like flavour. It is a technique used in this particular recipe, rather than a requirement for all saffron chai or karak chai. Can I use tea bags instead of loose tea?
Yes. Use 3 Assam tea bags in place of 3 teaspoons of loose Assam tea. Simmer for 5 minutes before adding the evaporated milk. Can I use fresh milk instead of evaporated milk?
You can, although the result will be different. Evaporated milk is more concentrated and gives the chai a fuller, creamier texture. If you substitute fresh milk, you may need to adjust the quantity to suit your taste. Can I make saffron chai without caramelising the sugar?
Yes. Add the sugar directly to the water and saffron instead. The tea will still be fragrant and creamy, but it won't have the same caramelised flavour. How do I get froth on top of the chai?
Strain the finished tea into a heatproof jug and carefully pour it between two heatproof vessels a few times. This introduces air and creates a light foam. Take care with the hot liquid and avoid pouring from an excessive height. Can I make saffron chai ahead of time?
You can prepare it ahead and refrigerate it for up to 2 days. Reheat it gently and froth it just before serving for the best finish.More Drinks and snacks to Try
