Honey Butter Crumpets (Japanese Inspired)

Honey Butter Crumpets (Japanese Inspired) - This Honey Butter Crumpets recipe is a twist on my Honey Butter Toast (inspired by Shibuya Toast) recipe. Instead of using thick sliced of pillowy milk bread, we're making a delicious version with gold, fluffy crumpets.

The result? A caramel like, crispy exterior with a soft, buttery, sweet honey soaked middle. They are utterly irresistible and ready in 30 minutes.

As mentioned in my Honey Butter Toast recipe, I first came across this idea via the brilliant bake off Queen and author Benjamina Ebuehi. They can be enjoyed plain or with indulgent toppings such as fruit compotes, double cream, ice cream, chocolate or nuts.

I promise that once you try them, you will make them a lot! These Honey Butter Crumpets are a quick, cosy dessert with the same magic of Honey Butter Toast but without the need to bake a loaf of Bread first. Perfect for when sweet cravings hit and you want something special in minutes.

Why you will love them

Quick and Easy - No need to start making a Shokupan Loaf! Just grab a pack of crumpets and you are half way there.

Golden caramelised edges - The Honey Butter glaze seeps into all the nooks and crannies in the crumpet making them a flavour and texture sensation.

Versatile - Serve as they are or top with mixed Berries, a compote or coulis, melted Chocolate or whipped Cream.

Ideal for Sharing - Serve for Dessert, Brunch or Breakfast with some Tea, Coffee or Matcha!

Ingredients in Honey Butter Crumpets

The ingredient list is pretty short and hopefully you will have all that you need in the house. No need to run to the shops..

Crumpets - Soft, Chewy with holed all over that soak up the Honey Butter. You will need 6.

Honey Butter Glaze - Made with softened Butter, a pinch of Salt, Light Brown Sugar and Honey. This glaze caramelises beautifully with some of it pooling at the bottom of the baking tin which works perfectly as an additional caramel finish.

How to make them

This is a very simple recipe. Here's what you need to do:

Preheat the oven to 180 C/Gas Mark 4/160 Fan/360 F.

Step 1 - Make the Glaze - In a small bowl, combine the softened Butter, Light Brown Sugar, Honey and Salt and mix till smooth.

* Note - If your butter is not soft - cut it into cubes, place it in a ziplock bag and into some warm water for 1 minute. I often use melted Butter and it works just fine.

Step 2 - Prep the Crumpets - Use a small spatula, a spoon or knife (not the sharp kind - P.s. I went down a rabbit hole trying to figure out what to call them because a knife can mean 2 very different kitchen utensils - a peak into my brain and how it overthinks just about any thing), to spread the butter mixture all over the crumpets, even the sides and bottom.

Step 3 - Bake - Bake at 180 C for 15 minutes. Then flip and bake for a further 7-8 minutes.

Step 4 - Scoop some of the pooled Honey butter on top of the Crumpets, then leave to cool for 5 minutes.

Step 5 - Serve plain or with toppings of your choice.

What to serve with Honey Butter Crumpets

These Crumpets are delicious on their own but you can be served with a whole array of toppings such as:

  • A cup of Chai, Tea, Coffee, Matcha or a Latte
  • Whipped Cream
  • Ice Cream (Vanilla, Chocolate or even Salted Caramel)
  • Fresh Fruit - Such as mixed Berries and Bananas
  • A fruit Compote or Coulis
  • Chocolate Treats such as crushed Oreos, Chocolate Fingers or a drizzle of Nutella
  • Sauces such as Caramel, Agave, Maple Syrup, Golden Syrup

Variations

Cook the Crumpets before hand- Toast or grill the Crumpets beforehand to remove some of the moisture.

Make them in a pan instead - You will need to control the heat and keep an eye on it.

Use flavoured Honey - Such as Orange Blossom for a unique twist.

Sugar Swap - Use Demerara Sugar instead of Light Brown for an added crunch.

Top Tips

  • The Honey Butter mixture will be HOT when it comes out of the oven. Carefully scoop some of the pooled mixture on top of the Crumpets and then leave them to cool for 5 minutes.
  • Use tongs to remove them form the tin, to avoid sticky fingers.

Storage

These are best enjoyed fresh (nothing beats the warm caramel crunch of just baked home made Honey Butter Crumpets), but here is how you can store leftovers:

Make Ahead - Grill the crumpets ahead of time to reduce oven time and prep the glaze up to a day ahead (store in the fridge).

Leftovers - Store in an air tight container for up to 1 day. Reheat in the oven at 180 C/360 F/gas Mark 4 or pan fry over medium low heat. For both methods, you will only need to do this for 2-3 minutes.

  • 125 g Butter I use Salted
  • 65 g Honey
  • 65 g Light Brown Sugar
  • Pinch Salt
  • 6 Crumpets
