Fudgy in the middle chocolate, oats and date bars

  • 210 g Oats
  • 190 g Pecans
  • 10 Medjool Dates Pitted Pre soaked for 10 minutes if hard
  • 100 g Coconut Oil
  • Pinch of Salt I used Maldon Sea Salt flakes

Fudgy Middle

  • 50 g Cocoa Powder
  • 50 g Coconut Oil melted
  • 90 g Maple Syrup


  1. Add all the ingredients for the bars to a food processor and pulse until they start to come together.
  2. Press half the mixture into a lined loaf tin.
  3. In a small bowl combine the ingredients for the filling and whisk together. Pour into the tin and spread evenly.
  4. Add the remaining bar mixture on top and press down with the back of a tablespoon.
  5. Pop the tray into the freezer to set for 1 hour.
  6. Cut into 8 bars.
