Chicken Naanwich

Chicken Naanwich - This is a recipe we make and eat all the time and have done since our college days. It is almost a non recipe, more of an assembly job. Ready to eat in under 5 minutes, this is a quick and easy recipe that is ideal for busy work days.

Ingredients
  

  • 1 Garlic Naan

Salad Ingredients

  • Cherry Tomatoes chopped
  • Cucumber chopped
  • Red Onion sliced
  • Red Chillies chopped

Chicken

  • cup Shredded Chicken Rotisserie, Tandoori Chicken

Coriander Mint Sauce

  • Handful Coriander
  • 10 Mint Leaves
  • 3 Green Chillies
  • 2 tbsp Plain Yoghurt
  • ½ Lime Juice only
  • Salt

Instructions
 

  • If not already warm, heat the Naan on a griddle or pan until warm and softened.
  • Add chopped Salad.
  • Add shredded Chicken.
  • Make the Chutney by blending together Coriander, Mint, Yoghurt, Green Chillies, Lime and Salt.
  • Drizzle Coriander Mint Sauce over Chicken and Naan.

Notes

How to make Naan without Yeast

I made the Naan for this recipe. If you would like to do the same, here is what you need to do:
Combine 1/4 cup Plain Yoghurt, 1 tsp Sugar, 1 tsp Baking Powder, Pinch of Bicarbonate of Soda, 2 cups Plain Flour, 1 tsp Salt, 2 tbsp Oil and 1/4 - 1/3 cup Water.
Knead for 2 - 3 minutes. Set aside to rest for 1 hour. Then heat on a non stick pan for 1 - 2 minutes each side.
I then brush the Naan with Garlic Butter.
To make this I combine 1/4 cup melted Butter, 4 crushed Garlic Cloves, 1 tbsp chopped fresh Coriander, 1 tsp Nigella Seeds.
I then mix them together and brush over the warm naan.

FAQS

Is Naan Healthy?

Yes Naan is Healthy. It is made with simple store cupboard ingredients. If you would prefer to make it lighter, don't use Garlic Naan or brush melted Garlic Butter on to the Naan. You can also use Wraps instead.

Can Naan be reheated?

Yes Naan is actually better reheated. Reheat on a hot pan until warmed through.

variations

This recipe is very easily adaptable. Here are some ideas:

Cheese

You can add a sprinkling of cheese to the Naan - Wich whilst still warm so you can enjoy some melty cheesey goodness.

Chicken 

Use any leftover Chicken for this recipe such as Air Fryer Whole Tandoori Roast Chicken or Preserved Lemon, Cumin and Thyme Roast Chicken.

Sauces

Use any sauce you like. Such as Garlic Mayo, Sour Cream, Mayo, Chilli Sauce, whatever you like.

Sandwich

This filling would work equally well in a wrap or as  a sandwich instead.

Lettuce Wraps

You can add the filling to lettuce for a healthier alternative.

Veggies

You can add your favourite veggies to the naan-wich. Add some peppers, Corn, Spring Onion, Avocado.

Hummus

You can add Hummus to this wrap as well as any other spread that you like.

Tips to make this recipe

Chicken shredding
Shred or cut the Chicken to the size you like but don't make the pieces too large.
As tempting as it is, don’t add too much filling to the naan-wich as it will be difficult to handle! 

Storage

This Naan- Wich is best eaten fresh but you can make the seperate elements ahead of time.

Fridge

This chicken, naan, salad and sauce will last separately in the fridge for up to 3 - 5 days in the fridge.

Freezer

The Chicken will keep well for up to 3 months in the freezer in an airtight container.
To use, allow the chicken to defrost or reheat gently in the fridge or microwave.
Add sauces and salad to naan-wich and continue with the rest of the recipe.
