Preheat oven to 180 C/Gas Mark 4.
Pat the Salmon dry with a paper towel.
Mix the Jerk, Oil, Salt and Pepper together in a small bowl to create a Jerk rub. Brush over the Salmon. Place Salmon on a baking sheet lined with parchment paper.
Bake in the preheated oven for 9 - 12 minutes.
Meanwhile, preheat a pan over medium heat.
Add Oil to the pan, then stir in chopped Onions. Cook over a medium low heat till light golden brown.
Stir in Jerk Seasoning, Honey, Water Garlic and Parsley. Bring to a simmer, then remove from the heat.
Remove the Salmon from the oven and pour over the Honey Sauce.
Meanwhile make the Salsa. Combine Mangoes with Red Pepper, Onion, Coriander, Jalapenos, Lime Juice and Salt in a small bowl and mix together.
Serve Jerk Salmon with Rice and Mango Salsa.
