    Vegetable and Herby Citrus Quinoa Salad - A simple and fresh quinoa salad that is Zesty, Zingy, Citrussy (basically lemony) and  Herby.

    I know what you're thinking, Here she comes again with yet another quinoa recipe. Yep another one! I know that quinoa salad seems to be a food blog favourite but once you make a good quinoa salad, you will just get it. The obsession that is and then you will be that person who always makes quinoa salad.

    This particular salad is one of my go to's because hello zesty herby quinoa salad = yum. So basically I eat a lot of this one and this Coriander and Mint Chutney Quinoa. The three things I love about quinoa, 1. It is SO filling and almost bulks out any food so you don't end up over eating. 2. It is so versatile. 3. It takes on flavour in the most incredible way. 

    The reason I make this salad is that it kinda just goes with everything. It happens to be the perfect side dish and no one has issues with herby and zesty flavours. Well..not in my world anyway.

    The other great thing about this salad is that you can toss up the quinoa and veg with the dressing in advance, so it gets all extra delicious and zingy, but then just take any greens you may want to add and toss it all together just before serving, to preserve the freshness. By the way as I said,this goes really well with most main meals and even sides. I'm talking hummus, baba ghanoush, muhammara etc. 

    Quinoa is one of my favorite grains. Technically, it’s a seed, but is often thought of as a grain. It is slightly higher in protein content than other grains. Quinoa contains all nine essential amino acids, making it a complete protein. I have a lot of other quinoa salad recipes on the blog such as Paneer Quinoa Salad with Pomegranate and Toasted Seeds, Gut Healing Quinoa Salad, Tenderstem Broccoli and Asparagus Quinoa and even Chocolate Quinoa Cookies.

    Vegetable and Herby Citrus Quinoa Salad

    Vegetable and Herby Citrus Quinoa Salad - A simple and fresh quinoa salad that is Zesty, Zingy, Citrussy (basically lemony) and  Herby.

    Cook Time 15 minutes
    Total Time 20 minutes

    Ingredients

    Salad

    • 200 g Quinoa Cooked in Chicken or Veg Stock
    • 1/2 large Cucumber diced
    • 125 g Baby Plum Tomatoes diced
    • 1/2 Red Pepper diced
    • 1/2 Yellow Pepper diced
    • 1/4 Red Onion diced
    • 3 tbsp Coriander Leaves chopped finely
    • 2 Mint Leaves chopped
    • 3 tbsp Mixed Seeds lightly toasted in a dry pan

    Dressing

    • 1 Lemon Juice and Zest of
    • 1 Lime Juice and Zest of
    • 60 ml Olive Oil
    • 1 clove Garlic crushed
    • Salt and Pepper

    Instructions

    1. Combine the salad ingredients in a large bowl and mix through using a large spoon.

    2. Combine all the ingredients for the dressing in a small bowl and whisk together.

    3. Add the dressing to the salad and mix together.

        Hi Neha,
        I use a mixture of sesame seeds, linseeds, pumpkin and sunflower seeds. I add black seeds too but don't toast them.
