    Jerk and Honey Salmon with Mango Salsa - This Jerk and Honey Salmon with Mango Salsa is a great way to serve salmon. It is super quick to make and incredibly delicious too. In this recipe, the Salmon is basted with a Jerk marinade and cooked till juicy and flaky. It is then glazed with a sweet and savoury glaze that makes this Salmon dish irresistible!     This sheet pan Salmon recipe comes together in under 20 minutes and I hope that it will become a favourite in your house like it is in ours. The best thing about it? This is a healthy meal that you can enjoy for lunch or dinner for the whole family.

    This Jerk and Honey Salmon is sooo good. It is all about that Jerk Honey Sauce!  In this recipe, a few simple ingredients come together to create the most delicious dish.

    I love this meal as part of my weekly meal prep because this healthy and nutritious meal is packed full of Protein, Vitamins, and Minerals.

    How to cook Salmon perfectly every time

    For perfectly cooked flaky and moist Salmon, cook it in a well oiled pan for 3 to 4 minutes Salmon skin side down and then flip and cook for 2 to 3 minutes on the other side for a fillet that is 1 inch thick thick and the thickest part of the filet. If the Salmon is thicker, it will need to cook it for longer.

    Or cook it in the oven for 9 - 12 minutes at 180 C/Gas Mark 4.

    For the Salmon

    Salmon filets  

    The star of the show! I use boneless, skin-on Salmon fillets for this recipe. You can use skinless Salmon. I prefer to use fresh rather than frozen Salmon. If you are using frozen Salmon, make sure to defrost fully first. 

    Light olive oil 

    I use some in the baste so that the Jerk Seasoning will adhere to the Salmon. We also add some in the Honey Sauce that is poured on top of the Salmon. 

    Honey 

    This adds sweetness but it also caramelises to make the most delicious Salmon recipe.

    Jerk Seasoning

    I use a powdered store brought version. If you are using a paste, you won’t need to add Oil.

    Salt and Black Pepper

    To season the dish and bring all the flavours together.

    Onion

    You can use Red, White or Spring Onion. I prefer Red Onion.

    Garlic

    You can use a paste or Garlic Powder/Granules.

    Parsley

    Fresh or Dry.

    For the Salsa

    Lime Juice, Mango,Red Bell Pepper, Jalapeños, Salt, Coriander is what you need.

    The sweet and zingy flavours of the Salsa marry well with the Savoury and Sweet flavour of the Salmon. 

    How to Make Jerk Honey Salmon and Mango Salsa

    This glazed Jerk Honey salmon recipe comes together in 20 minutes, making it perfect for lunch or a quick weeknight meal.

    Here are the simple steps you need to follow to make it:

    Step 1 - For the Salmon

    Preheat oven to 180 C/Gas Mark 4.

    Pat the Salmon dry with a paper towel.

    Mix the Jerk, Oil, Salt and Pepper together in a small bowl to create a Jerk rub.

    Brush over the Salmon.

    Bake in a baking dish or on a baking sheet lined with parchment paper in the preheated oven for 9 - 12 minutes.

    Step 2 - For the glaze

    Meanwhile, preheat a pan over medium heat. 

    Add Oil to the pan, then stir in chopped Onions. Cook over a medium low heat till light golden brown. 

    Stir in Jerk Seasoning, Honey, Water Garlic and Parsley. Bring to a simmer, then remove from the heat.

    Step 3 - Assemble

    Remove the Salmon from the oven and pour over the Honey Sauce.

    Step 4 - Make the Salsa

    Meanwhile make the Salsa. Combine Mangoes with Red Pepper, Lime Juice, Jalapenos, Salt and Coriander in a small bowl and mix together. 

    Step 5 

    Serve Jerk Salmon with Rice and Mango Salsa.

    Tips and Tricks

    How will I know when the fish is done?

    You can check with your finger or a fork by gently poking in the center of the fillet, seeing if it breaks into flakes. 

    Cook the glaze on Medium Low heat

    As the glaze has Honey in it which can burn, you need to cook on a medium low heat rather than a high heat. 

    Variations

    This Honey Jerk Salmon recipe is simple but also versatile. Try some of these ideas to change things up a little:

    Add Jerk Paste instead; 

    Serve with a sprinkling of fresh Citrus Juice such as Lemon Juice or Orange Juice;

    Add a pinch of Red Pepper Flakes for Spicy Salmon;

    Use Maple syrup or Brown Sugar in place of Honey;

    Add Slivered Ginger to the Honey Jerk Sauce;

    Add Onion Powder to the Jerk Honey Sauce;

    Serve with a Pineapple Salsa instead. Simply use half a small Pineapple in place of the Mango;

    Add some Lime Zest in the Salsa for even more zing!;

    Add your favourite fresh Herbs.

    What to serve with Jerk And Honey Salmon

    This delicious salmon recipe is a complete meal and the Salmon tastes great with the Mango Salsa alone but it is also great on a bed of Rice, Quinoa and Vegetables such as Roasted Potatoes and Carrots.

    Make Ahead Instructions

    To make this Jerk honey glazed salmon recipe ahead, stir the ingredients for the Honey Sauce together (skip the Onions) and store in the fridge for several hours before cooking or overnight. 

    Storage Instructions

    Fridge

    Leftover Salmon keeps well in the fridge for three days in an airtight container. 

    Freezer 

    Although the flavour won’t be the same, you can tightly seal and freeze cooked salmon for 3 to 4 months. I would suggest that you leave the Sauce and add it fresh on the day. 

    To reheat

    Thaw in the fridge. Or reheat it on the stovetop or air fryer until just heated through.

    Choose Salmon Fillets that are pink. Check the date! Give them a sniff. They should not have a smell to them.

    You can check if your Salmon is sustainable by checking out UK suppliers here. MSC labelled salmon comes from a fishery that has been independently certified to the MSC Fisheries Standard.

    This can be identified via a blue MSC sticker on the outer packaging.

    Can I cook Jerk Honey Salmon in the Air Fryer?

    Yes, Brush both sides of the salmon with glaze, and then Air fry at 200 C for 7-10 minutes.

    You can add the Sauce on top of the Salmon before placing in the Air Fryer. You don’t need to add the Onions or pre heat the Sauce. I often make this Tandoori Salmon in the Air Fryer.

    Ingredients

    Baked Salmon

    • 4 Salmon Fillets 1 inch thick
    • 1 tbsp Jerk Seasoning
    • 2 tbsp Light Olive Oil
    • Salt and Pepper

    Honey Jerk Sauce

    • 2 tbsp Light Olive Oil
    • ½ Red Onion diced
    • 1 tbsp Jerk Seasoning
    • 2 tbsp Honey
    • 1 tsp Garlic Powder
    • 1 tbsp Water
    • 1 tsp Parsley cut finely

    Mango Salsa

    • 1 Mango Diced
    • ½ Red Pepper Diced
    • ¼ Red Onion Diced
    • 1 tsp Coriander Leaves Cut finely
    • 1 tbsp Jalapeños in brine Sliced
    • ¼ Lime Juice Only
    • Pinch Salt

    Instructions
