Chicken
- 2 lb or 450g chicken breast cut into strips
- 4 tbsp Soy Sauce
- 2 tbsp Honey
- 1 tbsp oil
- Salt and Pepper to taste
Sauce
- 125 g smooth peanut butter
- 3 garlic cloves crushed
- 1 tbsp sesame oil
- 3 tbsp soy sauce
- 1 tbsp Honey
- 2 tbsp Sriracha or Hot Sauce
- 2 tbsp lime juice
- 200 ml coconut milk Half a Tin
- 3 tbsp water
- Salt to taste I use 1/4 tsp
Cabbage Salad
- 1/4 small Red Cabbage chopped finely
- 1/8 small White Cabbage chopped finely
- 1 Carrot grated
- 1/4 a small Red Onion sliced finely
Chicken
Combine the ingredients for the chicken and allow to marinade for an hour.
Heat oil in a non stick frying pan over high heat.
Add the chicken and cook until golden and cooked through, then transfer to a plate.
