Ingredients
  

  • 200 g Couscous
  • 250 ml boiled Chicken or Veg Stock/Broth
  • Salt and Pepper to taste
  • Juice of 1 Lemon
  • 3 tbsp Olive Oil
  • 1/4 - 1/2 tsp Dried Mint
  • Hand full Pomegranate Seeds

Instructions
 

  • Pour the Couscous into a bowl and stir in the stock, seasoning, lemon and olive oil.
  • Cover with Cling film for 10 minutes.
  • Remove cling film and fluff with a fork.
  • Stir in the pomegranate and dried mint and check the seasoning, adding more if necessary.
