Lemon and Pomegranate CousCous

This light, perfectly fluffed zesty Lemon and Pomegranate Couscous makes the perfect side or stuffing for vegetables and is extremely flavourful.

I can't believe it is only Wednesday. I have had a cold coming on since Eid and am at the heavy headed, body aching, foggy brained, stuffy nose stage. Also I am so tired and I want to sleep but I can't, because my throat is so tight mate.  This kind of food on a day when you cannae (Scottish for 'can not' apparently) is essential. It is light and  almost like you are not committing to a proper meal. 

I sort of can’t believe that we are in September and it is so cold. When did this happen? September means we are  headed to some really cold days. At some stage over the next month, cosy indoor boots, heavy knitted jumpers and joggers will become my uniform. Also socks...and I hate socks. Such a strange thing but I can't wear socks on most days. I hardly ever wear them. I feel like my feet are suffocating and I promise they aren't wide, so it isn't that. Oh also in the coming days, soup will also become a daily thing. Steaming hot slow cooked soup. So in some ways, I am kinda looking forward to it. Cosy is good right?

By the way who watched GBBO last night? I hate to say it but as much as i loved the last one, the one is better. It is so much fun. It's too early to have a favourite or predict a winner but i love Flo. Flo is a legend. 

I think I should get back to the recipe now..This couscous is subtle in flavour (I really dislike wet, sloppy cous cos. It is one of the reasons that I have avoided making it for so many years..the sight of sloppy cous cous at the salad bar in Morrisons still haunts me). This cous cous isn't that. It is light, subtle in flavour and fluffed to perfection. By the way is cous cous one word? Like couscous? Or is it 2 words? Also by the way, this is the first time I made couscous and I think I shall be making it more often now because it was prettttty delicious.

Lemon Cous Cous with Pomegranate

Ingredients
  

  • 200 g Couscous
  • 250 ml boiled Chicken or Veg Stock/Broth
  • Salt and Pepper to taste
  • Juice of 1 Lemon
  • 3 tablespoon Olive Oil
  • ¼ - ½ teaspoon Dried Mint
  • Hand full Pomegranate Seeds

Instructions
 

  • Pour the Couscous into a bowl and stir in the stock, seasoning, lemon and olive oil.
  • Cover with Cling film for 10 minutes.
  • Remove cling film and fluff with a fork.
  • Stir in the pomegranate and dried mint and check the seasoning, adding more if necessary.
