Instructions
Step 1 - Prepare the Fruit - Add the cubed watermelon, sliced peaches, strawberries, raspberries and blueberries to a large serving bowl.
Step 2 - Add the Remaining Salad Ingredients - Add the crumbled feta, sliced red onion, pickled onions and fresh mint. Gently toss to combine.
Step 3 - Add the Dressing ingredients - Add Lime juice, Lime zest, Extra virgin olive oil, Red wine vinegar, Honey, Aleppo pepper, Salt and Black pepper. Taste and adjust seasoning if needed.
Step 4 - Assemble - Drizzle the dressing over the salad and gently toss to coat.Scatter over the chopped honey roasted peanuts or pecans just before serving.

1 medium red onion, thinly sliced
120 ml (½ cup) fresh lime juice
60 ml (¼ cup) water
1 teaspoon fine salt
Instructions
Place the sliced onion in a jar or non-reactive container.
Whisk together the lime juice, water and salt.
Pour over the onions and toss to coat.
Let sit for 30 minutes at room temperature, or refrigerate for 1–2 hours for a stronger pickle.
Store in the fridge for up to 1 week.
Home Made Honey Roast Pecans or Nuts
Ingredients
450 g (1 lb) pecan halves
80 ml (⅓ cup) honey
2 tablespoon sugar (white or brown)
1 teaspoon coarse sea salt
¼ teaspoon cinnamon
Instructions
Preheat the oven to 175°C (350°F).
Line a baking tray with baking paper.
Warm the honey for 20–30 seconds in the microwave until pourable.
Toss the pecans with the warm honey until evenly coated.
Spread in a single layer on the baking tray.
Bake for 6 minutes, stir, then bake for another 6 minutes.
Let cool for 5 minutes.
Sprinkle with the sugar, salt, and cinnamon, tossing gently to coat.
Cool completely (about 30–45 minutes) before serving or storing in an airtight container.
