    5 minute Shirazi Salad

    5 minute Shirazi Salad, or Salad-e Shirazi, is a refreshing, vibrant salad that packs a flavour punch and is quick and easy to make. It consists of cucumber, tomato, red onions and herbs and the dressing is made up of olive oil, mint and citrus. It goes well with a lot of meals especially kebabs like these Joojeh Kebabs. You can use a salad chopper for the quickest results or chop it all yourself which really doesn't take much longer!

    5 minute Shirazi Salad

    This well known recipe comes from Shiraz - a city in South West Iranian.

    The salad is made up of standard salad vegetables and herbs and the dressing is made from simple ingredients.

    In the original recipe, a sour grape juice (ab-ghooreh) is used as part of the dressing.

    This isn’t something that I have come across in the UK so I use either Lemon or Lime Juice.

    Ingredients

    Here's what you need to make this Shirazi Salad -

    Cucumber

    Either use 3 - 4 Persian cucumbers or 1 large Cucumber.

    Tomatoes

    I either use baby Plum Tomatoes, Salad Tomatoes or Roma tomatoes.

    Use firm tomatoes that are not over ripe/juicy.

    If the tomatoes you have used are excessively juicy, I would drain them in a colander first.

    Onion

    Red is my favourite as it adds a touch of sweetness but White and Spring are ok too.

    Mint

    Dried mint is what is traditionally used. You could also use fresh mint - just chop finely.

    Herbs

    As well as the mint, I use a mixture of Parsley and Dill in this Salad.

    You can add whichever herbs you like. Other great options are Tarragon and Coriander.

    Seasoning

    Salt and Pepper balances the whole dish. So add it, toss the salad together, then taste and adjust.

    I also add Sumac because I love the colour and flavour. Sumac adds a zingy flavour to the dressing.

    This is an optional extra.

    Dressing

    Extra virgin olive oil, mint, lemon or lime, salt, and pepper.

    How to Make Shirazi Salad

    Dice the Salad Vegetables

    Dice your Vegetables to a similar size (1/4 inch) - Cucumbers, Red Onions, Tomatoes.

    Add the Herbs and Seasoning

    Stir in Fresh Herbs - Parsley and Dill.

    Stir in Dry Mint, Sumac,Salt and Pepper.

    Add the Dressing and toss the Salad

    Add the Olive Oil and Lime and toss the salad together.

    Tips and Notes

    Vegetables

    Try to dice the Vegetables to a similar size - 1/4 inch.

    Serve

    I like to serve the salad immediately but it is actually fine to serve it up to a couple of hours after it has been assembled.

    The flavours are just more pronounced.

    Dressing

    If you prefer the sale to be perfectly crisp, add the dressing just before serving.

    Tomatoes

    If the tomatoes are releasing alot of juice, drain in a colander before using.

    Herbs

    Add more fresh herbs if you like such as coriander and tarragon.

    Sumac

    Sumac adds a tangy flavour but you can skip it if you like.

    What to serve it with

    This salad goes well with so many dishes.

    I serve it with kebabs, chicken or as a side to many a traybake.

    Ingredients

    • 1 large Cucumber Diced to ¼ inch, or 3 Persian Cucumbers
    • 3 Tomatoes Diced to ¼ inch, Roma or Salad
    • ½ Red Onion Diced to ¼ inch
    • 2 tbsp Dill Leaves Chopped
