These tortilla kebab skewers are my take on the viral TikTok trend that's been popping up all over my feed. Layers of seasoned lamb are spread between tortillas, stacked, sliced into strips and threaded onto skewers before being grilled until golden and delicious.

My version uses ground lamb seasoned with cumin, allspice, smoked paprika, garlic and fresh parsley, followed by a brush of smoky, seasoned butter as the skewers cook. The tortillas turn lightly crisp around the edges, while the lamb stays juicy and full of flavour.

And the best part? My kids absolutely love them. They're fun to make, look impressive on a platter and are a brilliant way to turn everyday ingredients into something a little different. Serve them with warm flatbreads, a crunchy salad and your favourite sauces for a meal everyone can get stuck into.

Why You'll Love These Tortilla Kebab Skewers

They're inspired by a viral TikTok trend. The layered tortilla technique makes these kebabs look impressive without requiring you to shape individual portions of meat by hand.

They're packed with flavour. Cumin, allspice, smoked paprika, garlic and parsley give the lamb a wonderfully savoury flavour, while the seasoned butter adds another layer of smoky richness.

They're a family favourite. My kids love these, and they're easy to serve straight from the skewers. You can leave out the Aleppo pepper for a milder version.

The texture is brilliant. You get lightly crisp tortilla edges, tender lamb and plenty of flavour in every layer.

They're easy to serve. Add flatbreads, salad and a couple of sauces to turn them into a generous, family-style meal.

The Inspiration Behind These Lamb Tortilla Kebabs

If you've spent any time watching food videos on TikTok, you may have come across the viral tortilla kebab trend. The technique is simple but clever: spread seasoned minced meat between tortillas, stack them together, cut the stack into strips and thread the pieces onto skewers before grilling.

It's a playful alternative to shaping individual kebabs, and the layers create an interesting combination of crisp tortilla and juicy meat.

For my version, I've used ground lamb with cumin, allspice, smoked paprika and parsley. These flavours work beautifully together and draw inspiration from the grilled meats and spice combinations found in Turkish and wider Middle Eastern cooking.

These aren't traditional Turkish kebabs. The tortilla-layering technique is a modern twist on the idea of seasoned meat cooked over a grill, rather than a traditional preparation from a particular country.

I love recipes like this because they're a reminder that cooking doesn't always need to be complicated. Sometimes a clever idea, a handful of good spices and a few everyday ingredients are all you need to make something the whole family enjoys.

Ingredients You'll Need

For the lamb mixture

Ground lamb: I recommend lamb with around 20% fat. The fat keeps the meat juicy during grilling and gives the kebabs plenty of flavour.

White onion: Grated onion distributes moisture and flavour throughout the lamb. It also blends into the mixture more evenly than larger pieces of chopped onion.

Fresh parsley: Adds freshness and balances the richness of the lamb. Finely chop it so it distributes evenly.

Garlic: Five crushed cloves give the lamb a robust savoury flavour.

Ground cumin: Earthy and warming, cumin pairs particularly well with lamb.

Allspice: Adds fragrant warmth and depth to the meat mixture. Aka Pimento.

Smoked paprika: Brings colour and a subtle smoky flavour that works beautifully with grilled lamb.

Onion powder: Reinforces the savoury onion flavour throughout the mixture.

Aleppo pepper: Optional. It adds a gentle, fruity warmth without overwhelming the other spices.

Sumac: Adds a tangy, lemony, and slightly fruity sourness

Salt and black pepper: Essential for seasoning the lamb properly and bringing all the flavours together.

Tortillas: Six tortillas form the layers. Choose flexible tortillas that are easy to spread with the lamb mixture and stack without cracking.

For the seasoned butter

Butter: Adds richness and helps the seasoning cling to the kebabs.

Oil: Helps the butter coat the surface and reduces the risk of it browning too quickly over the heat.

Smoked paprika: Adds colour and reinforces the smoky flavour.

Ground cumin: Brings another layer of earthy warmth.

Garlic granules: Add savoury garlic flavour without introducing extra moisture.

Dried herbs: Bring a little extra savoury character to the basting butter.

Salt: A pinch seasons the butter and enhances the other ingredients.

How to Make Tortilla Kebab Skewers

1. Prepare the lamb mixture

Place the ground lamb in a large bowl. Grate the white onion. Add the onions to a muslin cloth and squeeze out as much juice as you can, crush the garlic and finely chop the parsley.

Add the onion, garlic and parsley to the lamb, followed by the cumin, allspice, smoked paprika, onion powder, Sumac, Aleppo pepper if using, salt and black pepper.

Mix thoroughly until everything is evenly distributed and the mixture becomes slightly sticky. This helps the lamb hold together when spread over the tortillas.

2. Prepare the tortillas

Lay the tortillas flat and trim away the curved edges to create straighter sides. Cut them into evenly sized squares or rectangles that can be stacked neatly.

Keep the pieces as uniform as possible so the layers line up and the finished skewers are easier to assemble.

3. Layer the lamb and tortillas

Place one tortilla piece on a clean work surface and spread a thin, even layer of lamb over it. Add another tortilla piece, followed by another thin layer of lamb.

Continue alternating tortilla and lamb until all six tortillas have been stacked, finishing with a layer of lamb on top.

Press the stack gently to compact the layers, taking care not to squeeze the meat out at the sides.

4. Cut and assemble the skewers

Cut the layered stack into evenly sized strips. Handle them gently to keep the tortilla and lamb layers together.

Carefully thread the strips onto skewers, keeping the layers aligned. Avoid compressing the pieces too tightly, as the heat needs to reach the meat evenly.

5. Make the seasoned butter

Melt the butter and oil together in a small pan over low heat.

Stir in the smoked paprika, ground cumin, garlic granules, dried herbs and a pinch of salt. Mix until evenly combined, then remove from the heat.

Keep the seasoned butter warm enough to brush easily over the skewers.

6. Grill the tortilla kebabs

Preheat your grill or barbecue to medium heat.

Place the skewers on the grill and brush them with the seasoned butter. Turn regularly, brushing with more butter as they cook.

Grill for approximately 10-12 minutes, adjusting the time according to the thickness of the meat and the heat of your grill. The tortillas should become lightly crisp and golden, while the lamb cooks through.

Check the centre of the thickest section with a food thermometer. Ground lamb should reach at least 70°C for 2 minutes, or an equivalent safe time and temperature combination.

7. Serve

Serve the skewers hot, straight from the grill. Give them another light brush of seasoned butter if desired.

Bring them to the table with warm flatbreads, salad and your favourite sauces. They're particularly good served family-style, with everything laid out so everyone can put together their own plate.

Tips for the Best Tortilla Kebab Skewers

Grate or dice the onion - This helps distribute its moisture and flavour throughout the lamb without leaving large pieces that can interfere with the layers. Add the onions to a muslin cloth and squeeze out as much juice as you can.

Mix the lamb thoroughly - The mixture should feel cohesive and slightly sticky rather than loose and crumbly.

Keep the layers thin -Thick layers take longer to cook and can make the stacks harder to cut and handle.

Press gently - Compacting the stacks helps them hold their shape, but pressing too hard can push the meat out of the sides.

Cut evenly - Strips of a similar size cook more evenly and are easier to thread onto skewers.

Turn regularly - Tortillas can brown quickly over direct heat. Keep an eye on the skewers and move them to a cooler area if they start colouring too quickly.

Brush as you cook - A thin coating of seasoned butter adds flavour and colour. Applying it gradually gives you more control over browning.

Check the centre - The tortillas may look golden before the lamb is fully cooked, so always check the internal temperature rather than relying on appearance alone.

What to Serve With Tortilla Kebab Skewers

These kebabs pair beautifully with fresh, crunchy sides and creamy sauces that balance the richness of the lamb.

  • Flatbreads or pita: Perfect for wrapping around the lamb and scooping up sauces.
  • Garlic yoghurt sauce: Cool, creamy and delicious with the smoky spices.
  • Turkish-style shepherd's salad: Chopped tomato, cucumber, onion and parsley add freshness.
  • Sumac onions: Thinly sliced onions tossed with sumac and parsley provide a sharp, tangy contrast.
  • Rice or bulgur: Ideal if you want to make the meal more substantial.
  • Pickled chillies and vegetables: Add crunch and acidity alongside the rich meat.

For a family-style spread, place the skewers in the centre of the table with flatbreads, salad and bowls of sauce. It's a simple way to turn the kebabs into a meal everyone can customise.

Storage and Reheating

Refrigeration: Allow leftover kebabs to cool and refrigerate in an airtight container within two hours. Eat within 48 hours.

Reheating: Remove the meat from the skewers if necessary and reheat until steaming hot throughout. A covered oven dish helps prevent the lamb from drying out. Ensure the centre is thoroughly reheated.

Freezing: For the best texture, freeze the cooked lamb separately from the tortillas if possible. Cool promptly, pack into a freezer-safe container and use within two to three months for best quality. Defrost in the fridge before reheating thoroughly.

Frequently Asked Questions

Can I make tortilla kebab skewers ahead of time?

You can prepare the seasoned lamb mixture in advance and refrigerate it until you're ready to assemble the kebabs. For the best texture, assemble and grill the skewers shortly before serving.

Can I use beef instead of lamb?

Yes. Ground beef can be used instead, although the flavour will be slightly different. Choose mince with enough fat to keep the kebabs juicy and ensure it is thoroughly cooked.

Can I make these without a barbecue?

Yes. A suitable oven grill can work well. Arrange the skewers on a grill-safe tray or rack, turn regularly and monitor the tortillas carefully, as they can brown before the meat has cooked through.

Are tortilla kebab skewers spicy?

They're warmly spiced rather than particularly hot. Aleppo pepper is optional, so you can leave it out for a milder version.

Why is my lamb mixture falling off the tortillas?

The mixture may be too loose, the lamb layers may be too thick, or the stacks may not have been pressed together firmly enough. Mix the lamb until slightly sticky, spread it in thin layers and handle the assembled stacks gently.

Can I use wooden skewers?

Yes, provided they're suitable for your cooking method. Prepare them according to the manufacturer's instructions and take care when turning the skewers on the grill.
