These Indian Spiced Caramelised Brown Sugar Carrots are quick and easy to make. They are sweet, vibrant and so insanely delicious!

Spiced Caramelised Brown Sugar Carrots

There are so many different ways to make roast carrots.

In this recipe though, you get caramelised edges and a sweet caramel sauce!

The carrots are cooked in light brown sugar, spices and butter and are tender and oh so more-ish.

They are ideal as a holiday side - Christmas/Easter/Thanksgiving. They are so quick easy to make too making them perfect for busy times when you are attempting to juggle multiple dishes in one day.

I have made this recipe with baby carrots, rainbow carrots  and Chantelle carrots and it works well for all types of carrots.

I always keep carrots in in my fridge. They're cheap, keep without spoiling for weeks and can be used in ample recipes! 

Oven roasting carrots not only intensifies their natural sweetness giving you the best flavoured carrots ever!

Ingredients in this Recipe

Carrots

Light Brown Sugar

Butter

Cumin

Ginger

Garlic

Kashmiri Chilli 

Cinnamon

Smoked Paprika

Salt and Pepper

Oil

How to make caramelised Brown Sugar Carrots

Add carrots to a large bowl with with butter, oil, sugar, ginger, cinnamon, salt and pepper, smoked paprika, kashmiri chilli powder, cumin powder and garlic powder.

Roast for 25 - 30 minutes until caramelised.

Tips and Variations

Add flavourings of your choice

Good flavourings include Caraway Seeds, Orange Zest, Chilli Flakes.

Oil and Butter

Cooking Carrots in butter at a high temperature, means it can burn. The oil stops it from burning so don't omit that especially if you choose to use honey instead of sugar instead! 

How to make on the Stovetop

You have 2 options here. You can add 400ml Stock to the other ingredients (minus the oil) and poach the carrots on the stove for 30 minutes or you can cook in a pan over medium heat for 6 - 7 minutes.

Carrot Type

Use your favourite variety. The recipe works well with all carrot varieties.

Carrot Size

Try and cut your Carrots into uniformly sized pieces so that they cook at the same rate.

Sugar

You can adjust the sugar quantities and also use a different variety of sugar like caster/dark brown or granulated. You can also use liquid sweeteners like honey or maple syrup.

Can they be made ahead of time?

Yes they keep well in the fridge in a container with a lid for up to 3 days. 

You can also just prep the Carrots (Peel and Chop) up to 3 days ahead of time.

What to serve with Caramelised Brown Sugar Carrots

This recipe works well as a side to many roasts. Try it alongside:

Ingredients
  

  • 1 Kg Carrots
  • 3 tablespoon Butter melted
  • 1 teaspoon Oil
  • 3 tablespoon Light Brown Sugar
  • ¼ teaspoon Ground Ginger optional
  • ¼ teaspoon Ground Cinnamon optional
  • Salt and Pepper
  • ½ teaspoon Smoked Paprika
  • 1 teaspoon Kashmiri Chilli Powder
  • 1 teaspoon Cumin Powder
  • 1 teaspoon Garlic Powder

Instructions
 

  • Preheat oven to 220C/200C/GM6.
  • Peel and cut carrots into 4cm pieces.
  • Add to a large bowl with with butter, oil, sugar, ginger, cinnamon, salt and pepper, smoked paprika, kashmiri chilli powder, cumin powder and garlic powder.
  • Place onto an oven tray leaving space between carrots.
  • Roast 10 minutes. Turn, then roast a further 15 minutes until caramelised at the edges.
