Fudgy Triple Chocolate Brownies (Best Ever) - Chewy loaded triple chocolate Brownies with a shiny crinkly top! My idea of a good brownie is one that is shiny and crispy on the outside with a really squidgy middle and this brownie is all of that and more. Gooey fresh out of the oven and fudgy after resting some time, these are the most luxurious brownies ever. They also include 3 kinds of chocolate - (white, milk and dark) and are super rich and chocolatey. They are genuinely THE BEST brownie I have ever had in my life and are based on my ultimate Dark Chocolate Brownies.

Fudgy Triple Chocolate Brownies (Best Ever)

I think by now it is pretty evident that I have come round to Brownies and they have become one of my favourite bakes ever. Here are some recent favourites:

My favourite chocolate brownie recipe and my go-to brownie recipe - The BEST Homemade Dark Chocolate Brownies, The BEST Sizzling Brownie with Ice Cream (Super Gooey!), 3 Minute Sharing Microwave Brownies.

The secret to a good Brownie is to use very little flour (just enough to provide some structure) and lots of butter and melted chocolate!

The other secret is to use a mixture of caster sugar and light brown sugar (brown sugar = more moisture and caster sugar = more chew).

What makes these Brownies extra special though is all the chocolate chunks running through them.

I used White Chocolate Chips, Milk Chocolate Chips and chopped Dark Chocolate.

Rich Chewy Chocolatey Brownies!

I cannot think of a treat that works better to get that chocolate fix then a Brownie laden with chocolate. 

Brownies taste great with all manner of additions added to them but they are truly delightful with chocolate chips studded throughout. 

There are endless variations for Brownies some of which are listed below. As well as those suggestions, why not try them with chocolate frosting or different kinds of chocolate such as Snickers or whatever you like really.

I love Blondies too which is a popular variation of Brownies made with Brown Sugar, Vanilla and White Chocolate chunks. 

The wonderful thing about Brownies is that they are super quick and easy to make and pretty much fool proof. Anyone can make brownies!

What are Brownies?

Brownies are an American recipe for a chewy chocolatey bake. One of the best thing about Brownies is that they are very easily adaptable.

You can add any of your favourite treats such as your favourite chocolates, caramel, cream cheese, dried fruits, walnuts, pecans, chopped chocolate, biscuits, nutella, Biscoff, pretzels, fudge.

Brownies can be made entirely without flour for super gooey brownies, they can be made fudgy/chewy by using brown sugar or they can be made cakey by baking them for longer. What is your favourite type?

In my opinion though the best brownies are chewy with a shiny papery skin.

They can be eaten by hand with a cup of your favourite beverage - such as tea, hot chocolate, warm milk or coffee. Or you can eat them with a spoon or fork served with a scoop of vanilla ice cream.

confused about the best ingredients to use? not sure if a substitution will work? here’s everything you need to know to make this easy recipe!

You need basic ingredients to make this deliciously moist brownie. Here is what you will need:

Salted or Unsalted Butter 

I use Salted. I know that many use Unsalted and then add a touch of Salt in the batter. You can do either.

Chocolate 

I recommend a good quality dark chocolate/bittersweet chocolate that is in the region of 60% Cocoa Solids. 

Plain Flour (All Purpose Flour) and Cocoa Powder 

The ratio of this is very little compared to the wet ingredients and that is what makes them so good!

Use any brand or supermarket cocoa powder but not drinking chocolate powder which does not have much flavour and often has added sweeteners.

Plain Flour works best in this recipe. Self Raising Flour can’t be substituted for Plain Flour in this recipe. 

Vanilla Extract 

A good Vanilla Bean paste or extract if you can find one. You can skip it too if you prefer.

Eggs 

For structure, emulsifying and thickening. Large Eggs are recommended. Any free range organic Eggs are perfect.

Light Brown Sugar and Caster Sugar 

For moisture and fudginess.

White and Milk Chocolate Chips, Dark Chocolate Chips or a good cooking Chocolate - Because YUM!

Salt 

A pinch of any standard table salt or Himalayan salt can be added into the batter.  Or a small sprinkling of Maldon Salt than be added on top of the Brownies once baked.

This is a recipe for chocolate lovers and the full recipe can be found in the recipe card at the bottom of the page:

Pre heat oven to Gas Mark 4/180 C/160 fan.

Line a square 9 inch square baking pan/tin with baking paper/parchment paper leaving some overhang to help lift them out later!

Melt Butter and Chocolate in a large mixing bowl over a medium saucepan of simmering water (double boiler) over medium low heat, making sure that the bottom of the bowl does not touch the water.

Beat Eggs, Vanilla and Sugar with an electric mixer or in a stand mixer till pale and voluminous. At least double in size! This is what makes fudgy brownies.

Stir in the melted Chocolate mixture slowly. If using a stand mixer, use a very low setting to mix in.

Sift in the dry ingredients -  Plain Flour and Cocoa and fold in very gently.

Fold in Chocolate Chips with a wooden spoon or rubber spatula. Again a gentle hand is important here.

Scrape brownie mixture into prepared pan and bake for 25 - 30 minutes.

Leave to cool completely before cutting.

can they be made in a mini muffin pan?

Yes they can. Grease well then halve the quantity of the batter. Dollop spoonfuls of batter into the muffin rounds. Bake for 10 – 15 minutes.

what is a substitute for eggs in brownie mix?

For each egg you would substitute:

½ Mashed Banana

1 tablespoon flaxseed ground, then mixed with 3 tablespoon Water (needs to rest first till it becomes gel like).

4 tablespoon Yoghurt

4 tablespoon Buttermilk

4 tablespoon Condensed Milk (but this is incredibly sweet)

4 tablespoon Silken Tofu

why is the middle of my brownie not cooking?

In this recipe, the centre of the brownies will remain gooey. It will need cooling time to set.

what does white sugar do in brownies?

White sugar is not as moist as brown sugar. Therefore adding some white sugar to a brownie or making a brownie just with white sugar, creates a chewier brownie.

how long do you bake brownies for?

Depending on how you like your Brownies, you may want to bake them for longer and baking time does vary.

When these come out of the Oven at 25 minutes they still have a slight wobble and are really gooey. I let them cool before placing them in the fridge for 2 hours for a really chewy Brownie.

At 30 minutes, they have a wobble too but not as much. This is how long I like to bake them.

You can also bake them a little longer - 4 minutes for a more cake like Brownie.

can brownies be frozen?

Yes these chewy triple chocolate Brownies freeze really well for up to 3 months.

can chewy triple chocolate brownies be left out?

These brownies can be left out for up to a week in an air tight container or metal tin but if you live in a hot country, I would suggest that you keep them in the fridge.

can brownies go in the fridge?

We place the Brownies in the fridge to set.

Yes, however keeping them in the fridge for extended periods will dry them out. 

As they are so gooey once baked, also them to cool and then place  them in the fridge for 1 hour to allow them to set fully. Bring them to room temperature (remove from fridge 10 – 20 minutes before serving).

when are brownies done?

Brownies are ready to eat at the 25 minute mark.

when are brownies undercooked?

Brownies are under cooked when their internal temperature is lower then 73 C/165 F.

why are my brownies cakey?

Over baking brownies (longer than 30 minutes) makes Brownies cakey.

why are my brownies dry?

This is down to overbaking which results in a dry, crumbly brownie. Incorrect storage also dries them out. If you do over bake them, slightly reheat in the microwave before serving. You can also serve with a ganache or chocolate spread.

how to store brownies

Fridge 

These keep well in an airtight container or tin in the fridge or on the counter top for a week. If it is particularly hot where you are, keep them in the fridge.

Freezer 

Brownies freeze well up to 3 months in a good airtight container or wrapped in 2 layers of cling film followed by one layer of tin foil.

Defrost 

At room temperature for 2 - 3 hours before serving.

They may be difficult to cut once cool and that is ok if you like gooey Brownies but if you don't my top tip for really chewy Brownies:

Brownies need time to set in the fridge for at least 2 hours.

Beyond that, keep them in the fridge if it is hot where you are or on the counter top in a metal tin and serve cold or slightly warm in the microwave before eating. 

Too long in the fridge can dry them out so try to keep them on a counter top in a tin if possible.

Chocolate

Use Dark Chocolate for the Brownie batter!

Chocolate Chips

I used regular Supermarket Chocolate Chips for the milk and white chocolate in this recipe.

Your batter shouldn't be too warm when mixing them in because they can melt.

For the Dark Chocolate, I used a cooking chocolate from a Supermarket.

Baking Paper

Allow some overhang, to make it easier to lift the Brownies out of the tin.

variations

There are endless variations for Brownies:

Coffee

Adding 3 teaspoon of Instant Coffee to the Brownie mix intensifies the chocolate flavour.

Or add espresso powder into the batter.

This enhances the chocolate flavour in these homemade brownies and gives a really rich chocolate flavor.

Chocolate

Add your favourite Chocolates into the mix – Anything from Twix, Snickers, Quality Street, Celebrations, Terry’s Chocolate Orange.

Biscuits

Add your favourite Biscuits into the batter – Digestives, Bourbons, Oreos.

Cereals

Add Cereals into the batter! Cornflakes, Rice Krispies, Crunchy Nut - whatever you like!

Nuts

Stir in some Nuts such as Walnuts, Macademia, Pecans. In my experience Pistachios don’t work as well.

Tea

Add some tea some as Matcha or Darjeeling into the batter.

Spices

Add Spices such as Cardamom.

Citrus

Add some zest such as Orange, Lime or Lemon.

Spreads, Syrups, Cream Cheese

Add a swirl of Caramel or Cheesecake at the end.

Add a Biscoff or Nutella spread and swirl it through the batter at the end.

Snacks

Try adding your favouite snacks such as Pretzels, M&Ms.

Ingredients
  

  • 225 g Butter
  • 200 g Dark Chocolate roughly chopped
  • 1 teaspoon Vanilla Extract
  • 75 g Light Brown Sugar
  • 150 g Caster Sugar
  • 3 Eggs
  • 100 g Plain Flour
  • 2 tablespoon Cocoa
  • 100 g Dark Chocolate Chopped (I used cooking chocolate)
  • 100 g White Chocolate Chips
  • 100 g Milk Chocolate Chips

Instructions
 

  • Preheat oven to Gas Mark 4/180 C/160 fan.
