    Indian Style Stir Fried Cabbage with Potato

    Indian Style Stir Fried Cabbage with Potato - One of my favourite meals is this mildly spiced indian cabbage and potato dish. It is perfect served with roti be it the traditional type or the gluten free variety. (Recipe for that coming soon).

My ootd right now is rather embarrassing. Luckily for both of us, you can't see it. How amazing is the weather though? I am loving the sunshine. Although I may not be as enthusiastic when I have to actually leave the house and pick up the kids from school. School runs are a nightmare as it is. Add to that the sun and the humans...erm can't wait. 

    I don't have to cook today and I am really happy about that because I just don't fancy it. I batch cooked for England over the weekend but I reckon it will last like 2 days tops. Mainly because they were salads. Which is fine. I can handle that. 

    I am back on the dairy free, gluten free train today. Basically my skin and body just aren't coping well with me consuming dairy and gluten. So its back to meat and vegetables. I don't actually mind it. The only time it becomes an issue is when you go through periods of socialising a lot but day to day, it's fine and also really decent delicious food. Today I had eggs and avocados for breakfast. I am making some gluten free crackers later for eating throughout the week too. For lunch I am having meat and salads and my evening meal will be prawns and salad. I am also having a chia pudding in between to keep things regular. I will be adding some Ashwagandha to it because it is my favourite adaptogen. I am doing a post about adaptogens soon so will expand a little on that there.

    My instagram and social media is kinda all over the shop because I am introducing topics I care about to my 'highlights'. So to populate those little circles will take a little bit of time and effort. I am really excited about it though because I have so much exciting stuff to share.

    Don't you just hate it when you can't tell what door the postman is knocking on? Story of my life. I'm about to go open the front door to some air. Bye for now! I hope you love this recipe as much as I do. Oh btw it's all made in one pot. Hallelujah! Tag me if you make it! 🙂

    Indian Style Stir Fried Cabbage with Potato

    Indian Style Stir Fried Cabbage with Potato - One of my favourite meals is this one pot mildly spiced indian cabbage and potato dish. It is perfect served with roti.

    Ingredients

    • 1 tbsp Oil
    • 300 ml Tomato Passata or tinned Tomatoes Pureed
    • 2-3 cloves Garlic crushed
    • 1 tsp Cumin Powder
    • 1 tsp Coriander Powder
    • 1/2 tsp Turmeric Powder
    • 2 tsp Red Chilli Powder Adapt to taste
    • 1 tsp Salt
    • 2 Potatoes Peeled and cubed
    • 1 Small White Cabbage Washed, drained then shredded/Chopped finely

    Instructions

    1. Heat oil in a medium wok/pan over medium/high heat and add the tomatoes and garlic. Allow to cook for 4- 5 minutes then add all the remaining ingredients and 2-3 tablespoons of water.

    2. Cover the pan, turn the heat down and steam for 8 - 10 minutes. Check the potato and cabbage is cooked, then remove from heat.

    Recipe Notes

    You can add peas to this dish as I often do. Just add at the same time as the potatoes etc.
