    Mint Aero Traybake

    This Mint Aero Traybake/Rocky Road is just so good. It is verrrry easy to make.  Simply melt chocolate with butter and golden syrup and combine with crushed Mint Aero chocolate/bubbles and digestive biscuits.

    Mint Aero Traybake/Rocky Road

    Whatever you call it, it is something the kids love to make and eat. Like most recipes of this nature, it is really easy to make too.  The only downside - you have to give it 2 hours to rest in the fridge before cutting and eating. Advice that we did not follow when taking the above pic.

    Mint Aero was my Gran in Law's favourite chocolate and this reminds me of her.

    Ingredients in Aero Traybake

    • Chocolate 
    • Butter
    • Golden Syrup
    • Digestive Biscuits 
    • Mint Oreos or Plain
    • Mint Aero Bubbles

    How to make Mint Aero Traybake

    Line a square tin with baking paper.

    Melt chocolate with butter and golden syrup.

    (P.s. It can be melted directly in the pan and doesn't have to be melted in a bowl over simmering water).

    Add in roughly crushed biscuits and aero.

    Mixture spread in tin

    Spread mixture into lined tin and refrigerate for 2 hours before cutting into pieces. 

    Variations

    • You can add Marshmallow, Wafers, Pretzels, chopped Nuts, Dry Fruits or flavourings such as mint essence or even some lemon zest to the mix.
    • Swap the biscuits for any biscuit that you like.
    • You can use Honey or Maple Syrup in place of Golden Syrup.

    Can it be made ahead?

    Yes! This Mint Aero traybake keeps well in an airtight container in the fridge for up to 2 weeks.

    Ingredients

    • 150 g Dark Chocolate Roughly chopped
    • 150 g Milk Chocolate Roughly chopped
    • 125 g Butter
    • 3 tbsp Golden Syrup
    • 100 g Digestives Roughly Crushed
    • 100 g Mint or Plain Oreos Roughly Crushed
    • 150 g Mint Aero Bubbles or Chocolate, Roughly Crushed

    Instructions

    1. Line a 9 inch square baking tin with baking paper.

    2. In a pan over medium low heat, combine chocolate, butter and golden syrup. Heat until melted. Set aside to cool a little.

    3. Stir in the crushed biscuits and aero.

    4. Spread the mixture into the lined tin. Place in the fridge for 2 hours to set before cutting into pieces.
