    Oven Baked Sweet Potato Fries

    Sweet potato is probably my most underused vegetable, and it is simply because my husband hates it in every form. I can't do anything to make him like them. In these Oven Baked Sweet Potato Fries, they are deliciously crisp on the outside and fluffy on the inside and are flavoured beautifully with spices and dressed in a garlic butter.

    I actually love sweet potato and regardless of how my family feel about it, I tend to sneak it into our shopping basket regularly. I’ve been making it a lot recently and using it in some great quick meals in place of the regular white potato. I also made the hassle back version that Nisha from Masterchef (who was kicked out far too early and should have been in the finals in my opinion) made in this video.

    I have been making hassle back potatoes for many years. If you scroll through my insta, you may see some really embarrassing photography but also the first time I made a hassleback too. I never thought of doing it with sweet potato though oddly. I might just make it tomorrow. 

    Sweet Potato is a nutritional power house of a veg that is energising too. When I was young, I would pop it in some foil and bake in the oven. I would then just add some butter. That was all it needed in my opinion. 

    Once you make these oven baked sweet potato fries, you will make them over and over again. They work wonderfully topped with Feta, Tamarind, Pomegranate, Herb Butters  and Garlic Butter.

    These fries are perfectly crisp (maybe not in the same way as a normal potato chip, I won't lie but pretty close) and they’re pretty healthy too.

    I have kept the flavour quite straight forward. The sweetness of the potato intensifies when baked, and the edges caramelise.

    I have recently started to make baked fries and actually prefer them to fried chips. That being said, I would never say no to chip shop chips!

    How to make Oven Baked Sweet Potato Fries

    Begin by cutting the sweet potatoes into thin matchsticks and then baking them with olive oil, herbs, and seasonings.

    The key to a crisp oven baked fry is not to overcrowd the tray. If you have too many sweet potatoes crowding the pan, the fries will steam instead of getting crispy. So use two trays if needed.

    While the fries are baking, make the garlic herb butter with fresh garlic, cumin and butter.

    Coat the hot fries with the butter, add an extra sprinkle of flaky sea salt, and that's all.

    The garlicky herb butter makes these extra special. You can use any herbs that you like and add hot sauce or spices into the mix too.

    Oven Baked Sweet Potato Fries

    Crisp Sweet Potato Fries with a simple garlic butter and baked with herbs and spices.

    Ingredients

    • 4 large Sweet Potatoes scrubbed, washed and cut into matchsticks around 1/4 inch thick
    • 3 tbsp Olive Oil
    • 1 heaped tsp Dry Thyme
    • 1 tsp Cayenne Powder
    • 1 tsp Smoked Paprika
    • 1/2 tsp Cinnamon Powder Optional
    • Salt and Pepper
    • 1 clove Garlic Crushed
    • 3 tbsp Butter Melted
    • 1/2 tsp Cumin Seeds Optional

    Instructions

    1. Preheat the oven to 220 °C/Gas Mark 7.

    2. Place the sweet potatoes on a large baking tray and add olive oil, thyme, cayenne pepper, smoked paprika , cinnamon if using, and a large pinch each of salt and pepper. Mix through using your hands.

    3. Spread the fries in an even layer. Do not overcrowd the pan. Transfer to the oven and bake for 15-20 minutes, then flip and bake for 15-20 minutes more.

    4. Meanwhile, mix together the melted butter, cumin seeds and garlic. Remove the fries from the oven and coat with the butter.

    Variations - You can add any flavourings you like including herbs or spices that you love. You can also add treacle like syrups afterwards such as Pomegranate Molasses or Tamarind. They also work well with a Garlic Aoili or Green Chutney.

      These look amazing! I make sweet potato fries regularly but never thought to add other spices to them, will give it a go now!
