A sizzling brownie doused in chocolate with a scoop of cold vanilla ice cream melting away on top of it!
Trust me, I’ve made this recipe so many times and it’s never failed me. Everyone LOVES it!
Crispy brownies with a decadent fudgy interior, a luxuriously rich chocolate sauce and cold vanilla ice cream. What more could you want from a sizzling brownie recipe?!
What is the meaning of Sizzling Brownie?
Sizzling Brownie is a famous dessert available in Indian Restaurants all over the UK and in India, where it was made popular in cafes in Mumbai and Kerala.
In this recipe a Chocolate Brownie is served in a cast iron pan usually on top of a sizzler plate with a scoop of ice cream on top. Melted chocolate sauce is drizzled top and around the Brownie.
It is most commonly eaten hot, directly from the pan whilst sizzling.
What is Sizzling Brownie made of?
The components are - a walnut brownie, vanilla ice cream and melted dark chocolate.
Who invented Sizzling Brownie?
It is unclear which cafe first came up with the famous sizzling Brownie.
Brownies themselves were invented by pastry chefs who were tasked with the job of creating a portable (transportable in boxes) confection for visitors to a Columbus exhibition in the 1800s.
Are Brownies supposed to bubble?
In this sizzling Brownie dessert, the sauce around the Brownie sizzles but not the Brownie itself! That should not sizzle, nor or Brownies supposed to boil!
How to make Sizzling Brownie without sizzler plate?
To make it without a sizzler plate like I do, heat the case iron pan and when serving place it on a wooden board or metal rack/trivet.
Best Cast Iron Pan to use?
Use a mini cast iron pan. They are readily available. Sometimes with Brownie mixes or Cookie mixes. Or you can purchase one from Amazon or online.
Sizzling Brownie with Ice Cream Ingredients
Confused about the best ingredients to use? Not sure if that substitution will work? Here’s everything you need to know to make this recipe!
If you are making the Brownies yourself you will need:
- Butter – I use either salted or unsalted butter in baking. Unsalted butter gives you more control over the final flavour of the Brownies but in my experience, in a recipe like this it doesn’t make a huge difference.
- Chocolate – I use Sainsbury’s Belgian Chocolate in the UK. I would recommend using a good quality dark chocolate but all cooking Chocolate varieties work.
- Cocoa powder – Never use a drinking Chocolate Powder as they just don’t lend the same flavour and have a whole host of other ingredients added to them. Any other Cocoa Powder is fine.
- Eggs – Large Eggs work best here. I love Clarence Court Eggs or any free range organic ones. Any Eggs will work though.
- Sugar – Caster sugar or Light Brown Sugar are ideal. I wouldn’t use anything too coarse like Demerara. You can use Granulated Sugar but I prefer Caster.
- Vanilla – The difference between a good quality Vanilla Paste and Vanilla Essence is vast. You can literally taste the difference. I would opt for the best quality you can.
- Plain Flour (All purpose Flour) is used here. Self Raising Flour can’t be used in place of Plain Flour for Brownies.
- Salt – A pinch of Salt brings balance. If you are using Salted butter, skip it. If not, then add a little white or Himalayan salt into the batter or add a sprinkling of Maldon Salt to the top of the Brownies once baked.
Alternative Brownies
You have options here - You can use store brought brownies, use a packaged mix, or make them yourself. 2 of my favourites are Chocolate Brownies or Triple Chocolate Brownies but you can also amend them by adding Walnuts for a more authentic sizzling brownie recipe.
Vanilla Ice Cream
I recommend store brought here. The reason being that this is meant to be a quick recipe that is more of an assembly job then anything else. If you are making the brownie then the ice cream, it turns into a days work.
Chocolate
Again you have options here. You can purchase chocolate sauce.
You can use Nutella heated up in the Microwave until it is more liquid.
Or you can make your own quite easily. More on that below.
How to make Sizzling Brownie with Ice Cream - At Home
Make Chocolate Sauce -
Melt chocolate in a bowl over a pot of simmering water over low heat.
Heat Butter, Double Cream and Sugar in a pot. Bring to a gentle simmer and then stir through melted chocolate.
Brownies
Make the Brownies as per your usual recipe (I have linked 2 above) and then slice into small squares. Or use store brought brownies.
Heat a small cast iron pan on the stove until very hot - 4 - 5 minutes.
Crumble some brownie into the bottom of the pan. My brownies were fudgy brownies that were a couple of days old.
Add a Brownie on top.
Assemble
Add a scoop of ice cream on top of the brownie.
Drizzle chocolate sauce around the brownie and some on top.
You can then add the pan back to the stove if it isn’t bubbling.
Bring to a quick simmer (literally seconds) and remove from the stove.
Serve warm and be careful as the pan and the contents will be hot!
FAQs, Tips and Tricks
Are Brownies supposed to be jiggly?
This is up to you. Some people like Brownies with a lot of jiggle and in that case they need to be baked for a shorter time. If you prefer cakey brownies, they should be baked longer.
How to serve and eat sizzling brownie?
The recipe is served with plenty of chocolate sauce and a scoop of vanilla ice cream.
It is a sharing dessert and one that should be approached with caution because it is hot! So check it first and blow on it a little before diving in!

Brownies
You can make this sizzling brownie recipe with store bought, a packaged mix or home made brownies.
Brownie Cooling Time
Allow your brownies to cool completely. Cutting them whilst they are hot will make a huge mess as the insides won’t be set.
Walnuts
You can add Walnuts to the Brownies or crumble some brownies into the pan.
Cast Iron Pan Caution
You can serve the sizzling brownie without the actual pan and remove it from the pan before serving but the effect of the bubbling can get lost. This is mainly for serving younger kids as the pan and handle are so hot.
Storage
Sizzling brownie is best eaten immediately.
Leftover Brownies can be stores at room temperature for up to a week in an airtight/metal container.

- 125 g Double Cream
- 1 tablespoon Caster Sugar or Granulated
