    Easy Brownies Recipe - This recipe is for the most delicious,  chewy fudgiest dark chocolate brownies with a crispy crackly top.

    Easy Brownies Recipe

    Recently I noticed that I have never put my brownies recipe on the site. I make them so often and somehow I had completely forgotten to put them on the blog. Even my husband was a little surprised..

    The great thing about this recipe is that you can do all the prep within 15 minutes and then just pop them in the oven so the recipe is very hands off. 

    I do recommend placing them in the fridge overnight but you can also eat them straight out of the tin after they have cooled a little (after 15 minutes).  

    You may not be able to wait though because they smell incredible and taste divine!

    Easy Chocolate Brownies Recipe Ingredients

    The great thing about brownies is that they need very few ingredients and they are store cupboard ones at that! 

    • 3 Eggs – This recipe doesn’t contain any baking powder, eggs are essential for helping the brownies puff up in the oven, they also help the ingredients emulsify and create chew.
    • Unsalted Butter - I like to use this so I can control the amount of Salt I add later and Salted butter varies on the amount of Salt used between brands.
    • Caster Sugar - For crisp edges and crackly tops. 
    • Plain Flour - I pre sieve the flour to make life easier.
    • Dark and Milk Chocolate - I use one Milk chocolate and one that is 60% cocoa solids or above.
    • Salt - Just a little to balance out the sweetness.
    • Additions - Like 100 - 200 of chopped Nuts and Chocolate.

    How to make Easy Brownies 

    These hocolate brownies are easy to make, here is what you need to do:

    Preheat the oven to 200 C/GM 6.

    Melt the chocolate and butter over a pan of simmering water.

    Whisk the eggs and sugar together for 5 - 8 minutes until pale and fluffy and then add to the cooled chocolate.

    Fold in the flour and salt and add any other additions.

    Pour into tin and level out using a spatula.

    Bake for 25 minutes.

    Best and Easiest Chocolate Brownies Recipe Tips

    • Use the best chocolate you can find - I use some milk chocolate combined with a bae that is 60 - 75 %.
    • It’s better to undercook them slightly then to bake them too much - overcooked brownies are dry so it is better to take them out at the 25 minute mark and then leave them to set.  Remember, they will continue to bake in the hot pan once they are out of the oven. Then gently lift them out of the tray and onto a cooling rack. 
    • Wait for them to cool - As tempting as it is, to face plant the entire tray, it is better to let them cool so they develop a better structure. I generally keep them in the fridge overnight and watch my kids roll their eyes at me for some of those hours.
    • Fold in the flour gently - You don't want to create air pockets or make the brownies too tough so be gentle.
    • Lighter coloured pans are better to bake brownies in - Darker tins bake cakes quicker so adjust timings if needed. 
    • If your tin size is different, you will need to adjust baking times - 17 cm x 27 cm (40 - 43 minutes), 20 x 30 cm (23 minutes), 23 cm x 33 cm (18 minutes).

    Storage

    These brownies keep well for up to a week in an airtight container in the fridge or a cool place.

    Freezer

    They also freeze well for up to 3 months if wrapped well in 2 layers of cling film, then 2 layers of foil. To thaw, leave at room temperature for 3 - 4 hours.

    Variations for Easy Chocolate Brownies Recipe

    • Add chopped nuts like Peanuts, Walnuts, Pecans.
    • Fold in some treats like Biscoff Biscuits, M & Ms, Oreos, Marshmallows. If adding on top, add them towards the end of baking time.
    • If you want to add Caramels - add them 2 - 3 minutes towards the end of cooking time.
    • Fold in dry Fruits such as Raisins.

    Easy Brownies Recipe

    Easy Brownies Recipe - This recipe is for the most delicious,  chewy fudgiest milk and dark chocolate brownies with a crispy crackly top.

    Ingredients

    • 200 g Unsalted Butter
    • 225 g Chocolate Chopped, I use 1/2 milk and 1/2 dark
    • 3 Eggs
    • 265 g Caster Sugar
    • 175 g Plain Flour
    • ¾ tsp Salt
    • 100 - 200 g Additions such as chocolate chips/nuts

    Instructions

    1. Preheat the oven to 200 C/GM 6. Line a 20cm square tin with baking paper.

    2. Melt the butter and chocolate over a pan of simmering water.

    3. Whisk the eggs and sugar together for 5 - 8 minutes in a large bowl until pale and fluffy and then add to the cooled chocolate whisking in till incorporated.

    4. Fold in the flour and salt and add any other additions. Pour into tin and level out using a spatula.

    5. Bake for 25 minutes. Allow to cool for 15 minutes - 1 hour in the tin before carefully removing to a wire rack. Place in the fridge overnight for best results.
