How to Make Chicken Doner Meal Prep Bowls
Make the Doner
Make the Seasoning - In a bowl, mix Ground cumin, Ground coriander, Ground cinnamon, Smoked paprika, Onion granules, Cayenne pepper, Salt, Black pepper. Add yoghurt, garlic, olive oil, tomato puree, honey, and lemon juice to the seasoning mix. Mix into a thick marinade.

Marinate the chicken - Add the chicken breast and coat thoroughly.
Marinate for at least 2 hours or overnight for best flavour.
Prepare the chicken - Use paper towels to blot the chicken breasts and remove excess moisture. Drizzle lightly with olive oil, then coat thoroughly in the marinade. This helps create better colour and flavour during cooking.
Sear the chicken - Heat a large pan over medium heat. Add oil and heat until shimmering. Place the chicken into the pan in a single layer.
Cook the chicken breasts for 7 minutes without touching until they develop a deep golden brown crust.
Flip the chicken and continue cooking for another 8 to 10 minutes, or until the chicken reaches an internal temperature of 74°C (165°F) at the thickest part.
Once cooked, rest the chicken for a few minutes before slicing.

Rinse the rice - Rinse the basmati rice under cold water until the water runs clear. This removes excess starch and helps keep the rice fluffy rather than sticky. Let the rice drain well.
Sauté the aromatics - Heat olive oil in a saucepan over medium heat. Add Onion and cook for 5 minutes. Stir in Garlic and cook for 1 minute. Stir in Turmeric, Ground Cumin, Ground Coriander and Salt. Cook for 1 - 2 minutes.
Add the rice - Stir the drained rice into the pan, coating it well in the aromatics and oil.
Add the stock - Pour in the chicken or vegetable stock and stir well. Bring to a boil.
Simmer - Reduce the heat to low and cover with a tight-fitting lid. Cook for 20 minutes without removing the lid.This allows the rice to steam properly.
Rest and fluff - Remove from the heat and leave covered for 5 minutes. Fluff with a fork before serving.
Assemble the meal prep bowls - Divide the Mediterranean yellow rice between containers. Add sliced chicken. Store salad, pickles, and sauces separately.

Mediterranean Yellow Rice
- 1 ½ cup Basmati Rice Soaked for 30 minutes
- 2 tablespoon Olive Oil or Ghee
- 1 Onion finely diced
- 2 cloves Garlic crushed
- 1 teaspoon Ground Turmeric
- ½ teaspoon Ground Cumin
- ½ teaspoon Ground Coriander
- 1 ½ teaspoon Salt
- 3 cups Stock Chicken is best (Make sure it isn't salted or the rice will be too salty)
